本发明涉及食品加工技术领域,具体涉及一种能够提高老年人免疫力的花青素营养面组合物。
背景技术
紫甘薯除了具有普通红薯的营养成分外,还同时富含花青素3-4%(按甘薯块根干物质计算)。紫甘薯块根中的花青素不仅具有较强的色素功能,替代合成色素,从源头上规避利用合成色素制品,使人体累积性致畸和致癌降低,而且它是一种强有力的有机活性抗氧化剂,能够保护人体免受一种叫自由基的有害物质的损伤,能够抗癌、防老化,增强血管弹性,改善循环系统和增进皮肤的光滑度,抑制炎症和过敏,改善关节的柔韧性。依据上述原理,利用紫甘薯块根中的花青素制备一种能够提高老年人免疫力的花青素营养面组合物(以此生产花青挂面、馍、粉冲剂等)是非常必要的。
目前,我国60岁以上人口1.78亿,并且每年递增500万以上的人口。随着经济发展,人们对幸福指数的追求,提高老年人的免疫力、有效地提高老年人抵抗疾病的能力、延缓衰老、健康长寿的饮食消费市场潜力是非常巨大的。因此,推出“一种能够提高老年人免疫力的花青素营养面组合物”,对于推动社会和谐发展具有重要意义。
发明内容
本发明所要解决的技术问题在于提供一种食用安全,营养丰富的能够提高老年人免疫力的花青素营养面组合物。
本发明所要解决的技术问题采用以下技术方案来实现:
一种能够提高老年人免疫力的花青素营养面组合物,按重量份数计算,由以下组分组成,紫甘薯花青素淀粉10-48份、黄豆粉90-110份、小麦面粉70-80份、食盐0.015-0.02份、钙粉2-3份、维生素A为0.001-0.0015份、维生素D为0.000007-0.00001份、植物油1.8-2.2份。
本发明的另一目的是提供一种花青素营养面组合物的制备方法,其步骤如下:
1、按组分的重量份数分别称取:紫甘薯花青素淀粉、黄豆面粉、小麦面粉、食盐、钙粉、维生素A、维生素D、植物油;
2、将分别称取的紫甘薯花青素淀粉、黄豆面粉、小麦面粉、食盐、钙粉、植物油先后倒入双层自动加热不锈钢搅拌釜内加入适量的水,并加热到55℃-60℃,每分钟240转,搅拌30分钟;
3、将称取的维生素A和维生素D再倒入已加热搅拌30分钟的组合物内继续搅拌25分钟;
4、将步骤3中加热搅拌的组合物取出来凉至恒温;
5、用研磨器皿将凉到恒温的组合物研磨到150-200目;
6、按不同需求量,包装成袋进入消费市场。
所述紫甘薯花青素可以通过常规方法制取,或者通过以下方法制取:在紫甘薯收获季节,将紫甘薯块根用水洗去表皮泥土,然后制浆并提取淀粉,经晒干或烘干后包装备用。
本发明的组合物可作为面食食用,制作方便,营养易于吸收。
本发明的组合物可直接制备成挂面食用。
本发明的有益效果是:本发明配制方法简单,不添加任何添加剂,食用安全可靠,非常适合老年人食用,可制备成挂面,易于消化吸收,使人们在品尝美食的同时还能起到保健功能,营养价值高,长期食用能够提高免疫能力。

实施例1
1、分别称取按每配制1000g花青素营养组合物计算:①紫甘薯花青素淀粉10g;②黄豆面粉110g;③小麦面粉80g;④食盐15mg;⑤钙粉2g;⑥维生素A1mg;⑦维生素D0.007mg;⑧植物油1.8g,余量为水;
2、将分别称取的①②③④⑤⑧先后倒入双层自动加热不锈钢搅拌釜内加入水,加热到55℃-60℃,每分钟240转,搅拌30分钟;
3、将称取的⑥⑦再倒入已加热搅拌30分钟的组合物内继续搅拌25分钟;
4、将加热搅拌的组合物取出来凉至恒温;
5、用研磨器皿将凉到恒温的组合物研磨到150-200目;
6、按不同需求量,包装成袋进入消费市场。
实施例2
1、分别称取按每配制1000g花青素营养组合物计算:①紫甘薯花青素淀粉48.0g;②黄豆面粉90g;③小麦面粉70g;④食盐16mg;⑤钙粉3g;⑥维生素A1.5mg;⑦维生素D0.01mg;⑧植物油2.2g,余量为水。
2、将分别称取的①②③④⑤⑧先后倒入双层自动加热不锈钢搅拌釜内加入适量的水,加热到55℃-60℃,每分钟240转,搅拌30分钟。
3、将称取的⑥⑦再倒入已加热搅拌30分钟的组合物内继续搅拌25分钟。
4、将加热搅拌的组合物取出来凉至恒温。
5、用研磨器皿将凉到恒温的组合物研磨到150-200目。
6、按不同需求量,包装成袋进入消费市场。
实施例3
1、分别称取按每配制1000g花青素营养组合物计算:①紫甘薯花青素淀粉25g;②黄豆面粉100g;③小麦面粉75g;④食盐17mg;⑤钙粉2.5g;⑥维生素A1.3mg;⑦维生素D0.008mg;⑧植物油2g,余量为水。
2、将分别称取的①②③④⑤⑧先后倒入双层自动加热不锈钢搅拌釜内加入适量的水,加热到55℃-60℃,每分钟240转,搅拌30分钟。
3、将称取的⑥⑦再倒入已加热搅拌30分钟的组合物内继续搅拌25分钟。
4、将加热搅拌的组合物取出来凉至恒温。
5、用研磨器皿将凉到恒温的组合物研磨到150-200目。
6、按不同需求量,包装成袋进入消费市场。

2.一种制备权利要求1所述的花青素营养面组合物的制备方法,其特征在于:包括以下步骤,
1)按组分的重量份数分别称取:紫甘薯花青素淀粉、黄豆面粉、小麦面粉、食盐、钙粉、维生素A、维生素D、植物油;
2)将分别称取的紫甘薯花青素淀粉、黄豆面粉、小麦面粉、食盐、钙粉、植物油先后倒入双层自动加热不锈钢搅拌釜内加入适量的水,并加热到55℃-60℃,每分钟240转,搅拌30分钟;
3)将称取的维生素A和维生素D再倒入已加热搅拌30分钟的组合物内继续搅拌25分钟;
4)将步骤3)中加热搅拌的组合物取出来凉至恒温;
5)用研磨器皿将凉到恒温的组合物研磨到150-200目;
6)按不同需求量,包装成袋进入消费市场。
