Abstract

Description

用于饮料的铁补充的方法
本发明涉及以焦磷酸铁的形式用可溶的且生物可利用的铁补充饮料的新方法。该方法允许以低成本进行饮料的铁补充,而不影响饮料的原始味道或颜色。还涉及浓缩的焦磷酸铁-柠檬酸盐溶液,以及其在富含铁的饮料的制备中的用途。本发明还涉及通过该方法可获得的饮料。
食物强化项目(Food fortification programmes)通常被认为是应对铁(Fe)缺乏的最具成本效益且可持续的方法。然而,铁强化项目的成功很大程度上取决于Fe化合物的仔细选择。不引起感官变化的便宜且高度生物可利用的Fe化合物将是理想的强化化合物。不幸的是,最具生物可利用的水溶性化合物(例如硫酸亚铁)常引起食物载剂中不可接受的颜色或风味变化,不可用于饮料中(Hurrel&Cook,1990,Trends Food Sci.Technol.1:56-61)。另一方面,已知在中性pH下焦磷酸铁是几乎不溶于水的Fe化合物,其常用于食品工业中用于强化婴儿谷物和巧克力饮料粉末。其主要优点是它对食物载剂不引起不良的颜色变化和引起有限的风味变化。然而,它难溶于有机酸如乙酸或柠檬酸,而溶于矿物酸如胃液。它在人体内(尤其是具有低胃液酸度的那些人)仅部分被吸收。焦磷酸铁的另一个缺点是由于其不溶于水,它不能用来强化饮料。
最近,已经开发了用于食物强化的可微粒化分散的焦磷酸铁(US6616955)。它是基于用乳化剂专门配制的焦磷酸铁颗粒。该产品可分散于水中,但尽管如此,由于颗粒不是真正地溶解,产品的生物可利用性仍然有限。此外,补充成本不允许饮料行业开发适合发展中国家或针对低收入人群的生物可利用铁补充的饮料。
本申请的发明人现已令人惊奇地发现增溶焦磷酸铁的新方法,该方法允许在接近中性pH(在pH5-7之间)下生成水性焦磷酸铁浓缩物,在所述接进中性pH下焦磷酸铁是完全溶解的,并且当用来补充包含至多15mg Fe/250ml饮料时不会产生任何异味或不愉快的颜色变化。这种方法不仅可以增溶焦磷酸铁,而且在冷却和储存时,焦磷酸铁保持在溶液中。此外,当与行业中目前可用的技术相比时,根据本发明生产的铁补充的饮料很便宜且与发展中国家中的铁补充相协调。
因此,本发明提供制备水性可溶焦磷酸铁浓缩物的方法,其中所述方法包含以下步骤:
(a)向水中加入0.1至5重量/体积%焦磷酸铁,
(b)向来自(a)的分散体中加入0.15至50重量/体积%柠檬酸盐,
(c)加热来自(b)的所得溶液,直到焦磷酸铁完全溶解。
作为比较,与柠檬酸一起煮的焦磷酸铁未完全溶解,因为在低酸性pH下煮时形成明显的不溶性正磷酸盐。令人惊奇地,在约6的pH下并且仅在上述条件下,焦磷酸铁完全溶解于柠檬酸三钠的热的水性溶液中。
水性可溶焦磷酸铁浓缩物的pH在4至8之间,优选地pH为中性至微酸性的并且在5至8之间。
本文中使用时,术语“水性溶液”指的是其中溶剂为水的溶液。“水性”一词指属于水、与水相关、类似于水或溶解于水中。水是一种随处可见的溶剂并且显然在饮料行业中是最优选的溶剂。
焦磷酸铁(也被称为二磷酸铁(III)盐,CAS:10058-44-3)、柠檬酸单钠(CAS:18996-35-5)、柠檬酸三钠(CAS:68-04-2)均可以从Spectrum Chemical购买到。
在一个优选的实施方式中,以在0.4和2重量/体积%之间的浓度、甚至更优选地浓度在0.5和0.8重量/体积%之间的浓度,将焦磷酸铁加入水中。在该浓度下,焦磷酸铁完全不溶于水,并形成白色浑浊分散体。
在另一个实施方式中,并且与焦磷酸铁浓度无关,柠檬酸盐的优选的量在4和20重量/体积%之间。甚至更优选地,它在4和10重量/体积%之间。
在另一个实施方式中,根据本发明的方法的特征在于,焦磷酸铁与柠檬酸盐的重量比在0.01和1之间、更优选地在0.05和0.5之间。选择该具体的比例,是为了使柠檬酸盐在中性pH或微碱性pH下有增溶焦磷酸铁的能力。
根据本发明的优选的柠檬酸盐选自柠檬酸一钠和柠檬酸三钠。鉴于加热时增溶焦磷酸铁的能力,最优选的盐是柠檬酸三钠。
在另一个实施方式中,根据本发明的方法的特征在于,步骤(c)的加热步骤是通过在80至120℃之间的温度下加热溶液10至120分钟来进行的。优选地,加热步骤是通过在大气压力下煮沸约100℃直至焦磷酸铁完全溶解来进行的。通常这在30至60分钟内完成。加热步骤可以任选地在加压下进行。在这种情况下,本领域技术人员当然会根据所施加的压强和温度来减少加热时间。
在另一个实施方式中,本发明还涉及通过本发明的方法可获得的水性可溶焦磷酸铁浓缩物。溶液的优选的pH在5和8之间。根据本发明的水性可溶焦磷酸铁浓缩物优选地包含0.25至12.5g Fe/l。
在另外一个实施方式中,本发明涉及根据本发明的水性浓缩物用于生产用1至60mg Fe/升补充的饮料的用途。根据本发明的优选的饮料选自汁、非碳酸软饮、牛奶和果汁。
通过下面实施例来进一步说明本发明。
实施例
实施例1:用可溶性焦磷酸铁补充的橙汁的制备
对于250升橙汁:
将18g焦磷酸铁和180g柠檬酸三钠溶解于3升沸水中。搅拌该铁浓缩物并加热直至完全溶解。然后将溶液冷却并加入到250升橙汁中。最终饮料可以被消毒。
该饮料在250ml即饮饮料(ready drink)中包含4.5mg生物可利用的且溶解的铁。
实施例2:用可溶性焦磷酸铁补充的牛奶的制备
对于250升牛奶:
将18g焦磷酸铁和180g柠檬酸三钠溶解于3升沸水中。搅拌该铁浓缩物并加热直至完全溶解。然后将溶液冷却,并且加入到250升牛奶中,然后马上消毒。
该饮料在250ml即饮饮料中包含4.5mg添加的铁和约0.2mg内在铁(intrinsic iron)。
实施例3:用可溶性焦磷酸铁补充的果汁饮料的制备
对于1000升果汁饮料
将72g焦磷酸铁和720g柠檬酸三钠溶解于12升沸水中。搅拌该铁浓缩物并加热直至完全溶解。然后将溶液冷却。
将156kg糖浆64°Bx、200g抗坏血酸、6kg柠檬酸50%水性溶液、适量风味香料(例如橙)和3kg的β-胡萝卜素10%CWS/S的1%水性原液逐步加入到200L水中,并在不使用高速混合器的条件下小心混合。然后加入冷却的铁溶液。将该糖浆混合、稀释至1000升并消毒。

Claims (7)

1.制备水性可溶焦磷酸铁浓缩物的方法,其中所述方法包含以下步骤:
(a)向水中加入0.1至5重量/体积%焦磷酸铁,
(b)向来自(a)的分散体中加入0.15至50重量/体积%柠檬酸盐,
(c)加热来自(b)的所得溶液,直到焦磷酸铁完全溶解。
2.如权利要求1所述的方法,其特征在于所述焦磷酸铁的浓度在0.4和2重量/体积%之间。
3.如权利要求1或2中任意一项所述的方法,其特征在于所述柠檬酸盐的浓度在4和20重量/体积%之间。
4.如权利要求1或2中任意一项所述的方法,其特征在于所述焦磷酸铁与柠檬酸盐的重量比在0.01和1之间。
5.如权利要求1或2中任意一项所述的方法,其特征在于所述焦磷酸铁与柠檬酸盐的重量比在0.05和0.5之间。
6.如权利要求1或2中任意一项所述的方法,其特征在于所述柠檬酸盐选自柠檬酸一钠和柠檬酸三钠。
7.如权利要求1或2中任意一项所述的方法,其特征在于步骤(c)的所述加热步骤是通过在80至120℃之间的温度下加热溶液10至120分钟来进行的。
