1.将燕麦、扁豆、苦荞麦、玉米磨粉按比例混合均匀,即为杂粮混合粉。
2.将1、步骤的杂粮混合粉在文火条件下进行炒制,直到杂粮粉散发香味,得到熟化混合粉。
3.杏仁预处理:将杏仁预先浸泡脱毒处理后,焙烤出香味冷却加入部分2步骤杂粮熟化粉进行粉碎,得到杏仁粉。
4.将2步骤熟化混合粉、3步骤杏仁粉混合,加入亚麻籽油进行搅拌,使油与杂粮粉充分混匀得到杂粮油面粉。
5.称取40%~60%(4步骤油面质量分数)的白糖和40%~60%的麦芽糖,混合,加入适量的水加热,使白砂糖溶解,小火熬制,直到能挑丝为止;将熬好的糖浆倒入4步骤杂粮油面粉中,待温度合适即可拔丝;直到糖酱冷却,形成均匀的细如发丝的结构,迅速制成所需形状,晾干,即得本方法杂粮休闲食品。
Claims (1)
1.一种复合杂粮休闲食品生产方法,其特征在于,其主要配料由燕麦、扁豆、苦荞麦、玉米、杏仁、亚麻籽油组成,其具体工艺为:
a将燕麦、扁豆、苦荞麦、玉米磨粉按比例混合均匀,即为杂粮混合粉。
b将a步骤的杂粮混合粉在文火条件下进行炒制,直到杂粮粉散发香味,得到熟化混合粉。
c杏仁预处理:将杏仁预先浸泡脱毒处理后,焙烤出香味冷却加入部分b步骤杂粮熟化粉进行粉碎,得到杏仁粉。
d将b步骤熟化混合粉、c步骤杏仁粉混合,加入亚麻籽油进行搅拌,使油与杂粮粉充分混匀得到杂粮油面粉。
e.称取40%~60%d步骤杂粮油面粉质量分数的白糖和40%~60%的麦芽糖,混合,加入适量的水加热,使白砂糖溶解,小火熬制,直到能挑丝为止;将熬好的糖浆倒入d步骤杂粮油面中,待温度合适即可拔丝;直到糖酱冷却,形成均匀的细如发丝的结构,迅速制成所需形状,晾干,即得到本方法杂粮休闲食品。
