发明背景
谷物棒通常通过将谷物薄片和坚果、水果、巧克力等的碎片与糖浆混合以形成粘结的结构来生产。具有高蛋白含量的谷物棒主要依靠具有高蛋白含量的成分的加入。但是,迄今为止,还很难在传统的谷物棒中引入高含量的牛乳蛋白。
WO 03/030659记载了含有高含量的全乳固体的挤出型乳制速食产品的生产。
US 7,220,442 B2记载了制备含有高达40%的非大豆蛋白的营养棒的方法。
含有高含量牛乳蛋白的谷物产品在生产或贮存过程中的稳定性以及所述产品的营养品质仍有待提高。
发明目的
因此,本发明的目的是提供一种具有改善的稳定性和改善的营养特性的谷制食品。

发明详述
本发明的食品包含烹熟挤出的谷制颗粒。所述烹熟挤出的谷制颗粒优选含有至少16%牛乳蛋白,更优选至少20%,甚至更优选至少30%,最优选至少40%牛乳蛋白。在一个实施方案中,谷制颗粒的牛乳蛋白含量在25和50%之间。

实施例
实施例1
首先利用PRODIMA AC-LI-500批处理混合器将下表所示的干混成分进行干法混合。然后将干混合物与油混合物在装配有叶轮的混合槽中在60°C下以90:1的干混合物:油混合物量混合。然后将湿混合物在单螺杆挤出机中在85°C的温度和50巴的压力下烹熟挤出。使挤出的产品形成大小约为3mm的颗粒并干燥。
用下表所示的成分制备包衣混合物。将颗粒用包衣混合物以71:29的谷物基料:包衣混合物重量比进行包衣。混合后,将混合物制成棒状并干燥。

6.前述权利要求任意一项所述的产品,其包含最多50%的所述糖基粘合剂。
7.前述权利要求任意一项所述的产品,其中的赖氨酸阻断低于20%,优选低于10%,更优选低于5%。
8.前述权利要求任意一项所述的产品,其中烹熟挤出的谷制颗粒用防潮层包衣。
9.前述权利要求任意一项所述的产品,其至少被部分地涂层。
10.前述权利要求任意一项所述的产品,其具有0.35+/-0.05的水活性Aw。
11.前述权利要求任意一项所述的产品,其是营养棒。
12.生产权利要求1至11任意一项所述的食品的方法,包括将含有牛乳蛋白的烹熟挤出的谷制颗粒与糖基粘合剂混合以提供所述食品的步骤。
13.权利要求12所述的方法,其中的混合包括选自水果碎块、巧克力碎粒、坚果、谷物薄片或其混合物的其它成分。
14.权利要求1至13任意一项所述的食品用于婴儿或儿童营养的应用。
