Abstract

通过挤压适当的混合物制造快餐食物一类制品,在挤出物的表面涂以调味品和/或香料。在挤压后直接将调味品和/或香料的水悬浮液涂在热的挤出物上,然后进行烘干。在悬浮液中可含有如淀粉酶一类酶的进行水解的物质。由于采用涂调味品和/或香料,没有油类物质,所以所得制品易于消化。

Description

本发明涉及谷类食物,快餐食物或即食粥的制造方法,该方法是将适当的混合物进行挤压,并在挤出物的表面上涂以调味品和/或香料。
人们已知的方法是先将经过挤压的快餐食物烘干,接着涂上油和调味品,它们可以混合涂抹,也可分别先后涂抹。这种方法的缺点是涂油量可能过大,造成产品在营养生理上的缺陷。
当前尤其是婴儿用的谷类食物和即食粥几乎全是辊式烘干装置上进行加工的。在干物质含量仅占配料的25%至30%的情况下,烧煮诸如奶粉或牛奶、粮食、蔬菜和糖一类的原料,接着在辊式烘干器中进行烘干,加工成絮状物。这种制造过程耗能很多,原料中大部分天然维生素和营养物质均已失去。这种失去的营养物质必须通过预先相应增加原料量或事后加入浓缩制品予以补偿。
过去对采用煮压方法制造婴儿食物已经进行了大量研究。在挤压机上要实现提高容易消化、消毒水平和粘糊程度等,耗资很大。但煮压时由于处理时间极短,可以使营养物质的损失保持在最低限度。因此,由于下述原因,在采用挤压技术制造婴儿食物方面遇到了许多障碍。在将奶粉和糖加到压挤混合物中后,由于为了增加粘糊程度而产生的焦糖化和不希望有的褐变反应,使必要的操作条件受到限制。由于在挤压机中高度均化,按相同配方用挤压技术和辊式干燥方法烘干所制得的产品,没有甜味。由于直接浸泡游离淀粉而产生团块,所以由挤压技术制造的絮状物颗粒在拌入牛奶或水中时,不能令人满意。采用该方法加入含脂添加物时更是困难重重。采用挤压技术制造的颗粒食物,其外观与由辊式烘干器制造的产品完全不同,特别是挤压制品的体积较小。
本发明的任务在于提供一种方法,从而能够制造维生素和营养物质含量丰富的、易消化、味美的制品和经济实惠的快餐食物一类产品。
解决本发明任务的途径是在挤压后直接将调味品水悬浮液涂抹在热的挤出物上,然后将挤出物烘干,需要时在烘干前先切开。
由于将调味品水悬浮液涂在未烘干的挤出物上,而水又易溶于挤出物的表面,形成糊状薄膜,使调味品、面包碎屑和干酪粉等在该薄膜上粘着良好。
接着进行烘干,得到的制品没有用作粘附剂的脂肪添加物,烘干时由于水溶于挤出物表面形成外皮,从而改善了食物的松脆性质。
按本发明的方法,还可以获得特殊的口味效果,且加水量也可减少,将进行水解的物质如淀粉酶一类的酶加到含有少量水分的调味品悬浮液,这类酶不仅对挤出物表面产生物理溶解,而且由于将淀粉分解为糖,因此使挤压物表面发生变化,增加了表面的粘附性。
为了制造特别适宜于婴儿用的即食粥,在加热条件下,将粮食和/或蔬菜和/或果实与部分糖和牛奶组分挤压成很大的表面,将由液体、糖和/或牛奶干组分组成的悬浮液涂在热的挤出物上,需要时还可将少量粉状干组分撒在涂过悬浮液的挤出物上,然后将涂撒有悬浮液和干组分的制品烘干。
用挤压机将粮食和一定量的糖和牛奶组分进行挤压,在粮食完全溶解时,就会产生口味良好的值得想望的褐变反应。选择糖和牛奶的加入量的多少,应以能控制住挤出物中的芳香反应为前提。挤出物成形时,应注意尽可能形成大的表面。从喷嘴喷出的生面团膨胀后切开,同时调整喷嘴形状和切开顺序,使挤出物在良好的流动状态下获得尽可能大的表面。将由液体和糖或牛奶组分组成的悬浮液涂在还在蒸发的挤出物的热表面上,最好采用喷涂方法进行喷涂。悬浮液的粘度决定涂层的密度,因此也决定以后在拌入液体时颗粒的状况。然后将少量的粉状干组分涂在湿润的挤压制品上,最好将已喷撒过粉状干组分涂在湿润的挤压制品上,最好将已喷撒过粉状干组分的挤出物置于红外鼓式干燥器内,在很短的时间内烘干。
在最佳含水量为1%至6%的条件下,在封闭的碾磨过程中将挤出物制成所需大小的颗粒。
本发明的还有一个实施例是将糖浆喷涂在挤出物上。糖浆是一种难以结晶的物质,不可能采用常规方法操作。不用糖浆,则可用相当的制品涂在由挤出物组成的载体物质上。
本发明方法尤其可用于制造速溶饮料、汤或调味汁粘合剂。本发明方法还适宜于所制造的制品是预先将淀粉拌成粘糊状,并与其他组分一起加工成冷溶胀的速溶面粉或速溶颗粒。
本发明方法的优点是耗能少,因为特殊的蒸煮过程是在很低的湿度下进行的,并且只用少量的水或湿原料。由于处理原料的时间极短,涂过调味品的挤出物在挤压烘干时,营养物质损失很小,而且消毒达到最佳水平。
采用本发明方法,可以使用新鲜的牛奶、果实、蔬菜等,无须进行预处理,并且可以加入各种添加物,生产出新的产品。

Claims (6)

1、制造谷类食物、快餐食物或即食粥的方法,该方法是将适宜于制造所述食物的混合物进行挤压,并在挤出物的表面涂以调味品和/或香料,其特征在于在挤压后直接将调味品和/或香料的水悬浮液涂在尚未干的热挤出物上,后再烘干,需要时挤出物可在切开后再进行干燥,所述悬浮液含有少量水分和能进行水解的物质以及淀粉酶一类的酶。
2、根据权利要求1的方法,其特征在于可涂上面包碎屑、干酪粉一类的制品。
3、由粮食、蔬菜、果实、糖、牛奶或奶粉中制造特别适宜于婴儿用谷类食物、快餐食物或即食粥的方法,其特征在于粮食和/或蔬菜和/或果实与仅略起焦化作用的一部分糖和牛奶组分在加热条件下将其挤压成很大的表面,将由液体、糖和/或牛奶干组分组成的悬浮液涂在热的挤出物上,在涂过的挤出物上,再涂上少量粉状干组分,然后将涂撒有悬浮液和少量干组分的制品进行干燥,并将干燥制品制成颗粒。
4、根据权利要求3的方法,其特征在于挤出物可喷上悬浮液和撒上少量干组分。
5、根据权利要求3或4的方法,其特征在于挤出物经干燥后的含水量为1%至6%。
6、根据权利要求3或4的方法,其特征在于将糖浆喷在挤出物上。
