Abstract
用本方法,可将植物物料转变成其它可供人直接食用的材料或者由植物物料制备出具有其它另一种香味的材料。将植物物料在一个快速转动的挤出器中在隔绝空气下、少于5秒的时间内加热到150至500℃。本方法特别适用于从谷物制备咖啡代用品或由磨碎的大豆制备香味料,使这种香味料,例如通过与脂肪和盐相混合而调制出花生黄油代用品。
Description
本发明是关于由植物物料制备可供人食用的产品或使植物物料味道改变的一种方法。
已知,植物物料通过化学反应而发生转变。由此或者可以把不能供人食用的植物产品变成可供人食用的产品;或者制备出具有味道完全不同的,作为原材料用的物料。
本发明是基于这样的任务,即创造一种方法,该法不用化学药品而把植物物料转变成其它可供人食用的物料。
按照本发明这个任务已得以解决,即植物物料在一个快速转动的挤出器中、在隔绝空气下在少于5秒的时间内从20℃加热到150至500℃的温度。
通过这样处理植物物料,在很高的能量水平非常短的时间内完成美拉德反应,在此反应时,在隔绝空气下植物物料发生味道转变。因为没有空气,因而也就没有氧气接触受处理的产物,因此不会发生植物物料的氧化和烧糊。
植物物料最好以一种非常润湿的能够滴流的颗粒形式加到挤出器中,并在挤出器中由快速转动的螺杆进行强烈揉搓。从挤出器的高压区出来,即从挤出器的喷嘴出来以后,在一个从1/100到1/10秒的非常短的时间内使挤出物所含的水份蒸发,而挤出物则很快被冷却到大约100℃。
这个方法首先是用于从谷物中制造咖啡代用品。由小麦或黑麦做的生面团加到挤出器中,在依赖于挤出器螺杆速度而定的时间间隔内,在少于5秒钟的时间之内加热到150至500℃。因为空气不能接触到谷物生面团,不会发生由氧化而产生的焦褐,只发生美拉德反应。在此,挤出物的焦褐程度与所用谷物的润湿度相关。
如果挤出物只有很浅的褐色,为了保持象咖啡那样的典型的深褐色,就接着进行挤出物的烘烤。为此要把挤出物切成小扁豆粒那样大小的颗粒,用已知的方法进行一次烘烤。
按照另一个较好的实施例是将这个方法用于由磨碎的大豆制备象花生味道的产品。在用本发明的方法在一个快速转动的挤出器中处理磨碎的大豆时,磨碎的大豆在产品中发生味道的转变,转变成象花生一样的味道。为了调制花生黄油,可把挤出物磨碎与脂肪和盐混合成花生黄油代用品,这种花生黄油代用品或者能直接食用,或者可涂在其它挤出物上,例如用于制备一种花生福利普酒的代用品。
Claims (8)
1、由植物物料制备可供人食用的产品或使植物物料味道改变的方法,其特征为,把植物原料在隔绝空气下在一个快速转动的挤出器中在少于5秒的时间内加热到150至500℃的温度。
2、按照权利要求1的方法,植物物料是以一种强烈润湿的、能滴流的颗粒形式加入到挤出器中,并被强烈地揉搓。
3、按照权利要求1的方法,其特征为,可用于从谷物制备咖啡代用品。
4、按照权利要求3的方法,其特征为谷物是指黑麦或小麦。
5、按照权利要求3或4的方法,其特征为从挤出器出来的挤出物要加以切碎。
6、按照权利要求5的方法,其特征为挤出物要经过烘烤。
7、按照权利要求1或2的方法,其特征为可用于从磨碎的大豆中制备花生味香料。
8、按照权利要求7的方法,其特征为将挤出的花生味香料磨碎并与脂肪和盐混合成花生黄油代用品。
