本发明涉及一种植物蛋白领域,尤其是一种植物蛋白粉及生产方法,其中包括:赖氨酸:蛋氨酸:色氨酸:苏氨酸:异亮氨酸=1:0.25-0.3:0.14-0.16:0.5-0.6:0.5-0.6,优选原料配比重量为:豆粕280份,菜籽粕250份,棉籽粕220份,玉米蛋白粉140份,啤酒酵母11份。生产步骤包括配方和生产用量确定、初步粉碎、称量、混合和微米化粉碎等。本发明的植物蛋白粉天然、营养合理、利于吸收,其生产方法操作简单,蛋白质消化率提高10%,代谢利用效率提高≧20%。

一种植物蛋白粉及其生产方法
技术领域
本发明属于植物蛋白的领域,尤其涉及一种植物蛋白粉及其生产方法。
背景技术
蛋白质是人和动物营养不可缺少的物质,蛋白质的食物来源可分为植物性蛋白质和动物性蛋白质两大类。植物蛋白具有价格低,来源多的优势,但天然植物蛋白消化效率低,一方面植物蛋白组成蛋白质的氨基酸,有一半以上是人和动物不能合成,另一方面由于蛋白质生物活性的立体空间结构存在的原因,如抗原蛋白,抗酶蛋白,抗营养蛋白等的空间结构不同的,进入人和动物体内的蛋白质氨基酸利用率不高。还有,人体内必需的氨基酸也不能由非蛋白质含氮物质代替。
上世纪五、六十年代以来,人们一直在努力解决蛋白质紧缺问题,但是不管是浓缩叶蛋白,石油酵母蛋白,微生物菌体蛋白,或是提高蛋白利用效率如水解蛋白、肽蛋白,甚至水解氨基酸等,都会面临如何能让植物蛋白保持天然特性,又能让人和动物对蛋白质有高的吸收率和利用率的问题。
发明内容
本发明要解决技术问题是提供一种天然、营养合理、利于吸收和制作操作简单的植物蛋白粉及其生产方法。
为解决上述技术问题,本发明提供的技术方案为:配比组份包括赖氨酸、蛋氨酸、色氨酸、苏氨酸和异亮氨酸,其中赖氨酸∶蛋氨酸∶色氨酸∶苏氨酸∶异亮氨酸=1∶0.25-0.3∶0.14-0.16∶0.5-0.6∶0.5-0.6。
本发明的植物蛋白粉的配比优选方案为:豆粕280份,菜籽粕250份,棉籽粕220份,玉米蛋白粉140份,啤酒酵母11份。
通过对各原料营养成份合理而平衡的搭配,减少蛋白质氨基酸的无效代谢,提高净利用率。
就植物蛋白粉的生产方法而言,本发明解决技术问题的植物蛋白粉生产方法包括以下步骤:
①确定配方原料及生产用量
根据配方确定原料种类和实际生产所需要用量。
②原料初步粉碎
用常规加工的粉碎机,分别对原料进行粉碎,并单独存放。
③称量
按照配方比例,准确称量已经粉碎好了的原料,直接放入混合机中。
④混合
开启混合机搅拌混合5-8分钟。
⑤原料微米化粉碎
选用流化床气流超微粉碎机(四川巨子超微科技有限公司,JZC-1250)完成操作程序。
在本发明植物蛋白生产方法中,常规加工的粉碎机为1.5-2毫米筛网的锤片粉碎机,原料粉碎后粒径500-830微米。流化床气流超微粉碎机的压缩空气压力=6-7kg/cm2,分级机分级频率=45-55HZ,物料层厚度=450-600毫米。完成微米化处理的植物蛋白粉体,粒径20-55微米,粒径20-50微米的粉体为95%。
本发明的生产方法维持其决定基本特性的化学结构组成不变条件下,改变植物蛋白原料的立体空间结构,植物蛋白体积减小,去除附着在植物蛋白体上的其他物质(如脂质,矿物元素,果胶、胶原等碳水化合物),降低植物蛋白致敏、抗消化,使消化过程中蛋白酶直接快速地接触消化道,增加酶与消化道的接触面,提高消化率,提高植物蛋白源中非蛋白质物质在消化道中消化作用以及调节微生态功能的作用。使植物蛋白更适合人和动物利用,也不失其天然特性。
利用本发明方法生产的植物蛋白粉,蛋白质的消化率提高10%,代谢利用效率提高≥20%。
具体实施方式
本发明中所用的流化床气流超微粉碎机为四川巨子超微科技有限公司生产的JZC-1250型。
实例1豆粕300kg,菜籽粕300kg,棉籽粕250kg,玉米蛋白粉150kg,啤酒酵母200kg,用常规饲料加工的锤片粉碎机和1.5厘米的筛网分别对每种原料粉碎,单独存放。称取粉碎好了的豆粕2800kg,菜籽粕250kg,棉籽粕220kg,玉米蛋白粉140kg,啤酒酵母110kg,直接放入混合机中,搅拌6分钟。用流化床气流超微粉碎机,设定为6.5kg/cm2,分级机分级频率50HZ、物料层厚度500mm,进行微米化粉碎。装入袋中保存。
取以上实例中的植物蛋白粉作为样本进行试验并分析:
1.在实验室进行相关参数指标测定。植物蛋白粉的粗蛋白质消化率,用体外试验方法测定。测定样本和指标均按实验方法规定设三个重复,结果如下:

结果表明,微米化处理的植物蛋白粉体较常规制备的粉体,容重减轻、体积增大、水溶性增加、颜色变淡、吸水能力增强。粉体粗蛋白的体外消化率提高,说明微米化粉体的消化率可以大幅度提高。
2.对仔猪进行消化试验,如下:
10头体重9±1.5kg的DLY(一种杂交猪)断奶仔猪,平均分成两组饲养。实验仔猪饲养7天后收尿粪7天,随后对所收取的尿粪进行分析测定:

以上结果表明,最突出的效果是提高饲料蛋白质的消化率,进入体内后,提高代谢利用效率,提高原料生物特性的利用价值。
本发明的植物蛋白粉和生产方法不受原料种类限制,一切能作营养来源,或经本专利技术改造后能作营养成份的植物资源都属于本发明的利用范畴。

Claims (1)

1.一种植物蛋白粉的生产方法,包括以下步骤:
   ①确定配方原料及生产用量
      根据配方确定原料种类和实际生产所需要用量,配方重量份为:豆粕 280份,菜籽粕 250份,棉籽粕220份,玉米蛋白粉140份,啤酒酵母 11份;
②原料初步粉碎
用常规加工的粉碎机,分别对原料进行粉碎,并单独存放;常规加工的粉碎机为1.5-2毫米筛网的锤片粉碎机,原料粉碎后粒径500-830微米;
 ③称量
按照配方比例,准确称量已经粉碎好了的原料,直接放入混合机中;
 ④混合
开启混合机搅拌混合5-8分钟;
 ⑤原料微米化粉碎
   选用流化床气流超微粉碎机完成操作程序,流化床气流超微粉碎机的压缩空气压力=6-7kg/cm2,分级机分级频率=45-55Hz,物料层厚度=450-600毫米。
