Description

用于生产帕斯塔菲拉塔奶酪的凝乳揉捏设备
本发明涉及用于生产帕斯塔菲拉塔(pasta-filata)奶酪的凝乳揉捏设备。
在生产帕斯塔菲拉塔奶酪时,通过将凝乳通常通过凝乳与热水混合而加热到至少60℃的温度而使凝乳可塑或“可拉丝”。此后,揉捏可拉丝凝乳以获得纤维状糊膏,然后将纤维状糊膏碎成球或圆柱,球或圆柱通过冷却相继硬化。
揉捏过程通常通过机器进行,在机器中凝乳在切碎后装载到揉捏腔内,热水也馈送到揉捏腔内。在揉捏腔内运行的摇臂混合并拉伸由于凝乳和热水混合而形成的糊膏。将在揉捏腔内产生的糊膏逐渐馈送到后续模制操作,同时通过排放孔从揉捏腔排放多余的水。
但是,使用上述工艺,包含在所要揉捏的凝乳中少量百分比的诸如油脂、清蛋白或葡萄糖之类的水溶性营养物质在揉捏工艺期间不可避免地溶解在所使用的热水中。因此,从揉捏腔通过排放孔排放的水包含这些物质,这些物质因此损失,由此造成产品收得率的下降。此外,所要丢弃的水必须首先被撇去以便回收上述物质,然后被净化,使得可将水排放而不会发生环境污染问题,这些操作导致该工艺相当复杂。
设有摇臂的上述机器的另一缺点是需要相当大的功率来将水加热,使用较高百分比的水(每份糊膏使用两份水),于是生产成本增加。
使用其它类型的已知机器,试图通过螺旋推进器揉捏凝乳。但是,这些已知机器具有不连续的操作且因此具有较低的产品收得率。
因此,本发明的主要目的是提供一种凝乳揉捏设备,该凝乳揉捏设备能够生产具有范围通常在45%至65%的所要求的湿度的所有类型的帕斯塔菲拉塔奶酪,而不会损失掉在揉捏工艺中所使用的水中,使得所有的营养物质都保留在糊膏内,且同时消除潜在污染的工业废物。
本发明的另一目的是提供一种揉捏设备,该揉捏设备能够连续运行,使得生产率和产品收得率增加。
上述目标、其它目的以及优点会在下面的说明书中变得更加清楚,它们通过用具有如权利要求1所述特征的用于生产帕斯塔菲拉塔奶酪的凝乳揉捏设备来实现,而从属权利要求则通过本发明的次要特征来陈述其它优点。
现将参照较佳但非排他的实施例来详细描述本发明,在附图中以非限制性例子的方式示出了这些较佳实施例。在附图中:
图1是根据本发明的揉捏设备的侧视剖切图;
图2是以较大放大比例示出的图1的设备沿线II-II的横截面视图;
图3是以较大放大比例示出的图1的设备沿线III-III的横截面视图。
参照图1至3,根据本发明的揉捏设备包括框架,框架设有诸如10的支柱,支柱支承由可拆卸盖13关闭的揉捏通道12。一对平行的螺旋推进器14、16并排布置在通道内并使其螺旋轮廓沿相反方向旋绕并部分地插入彼此(图2、3)。如图2中详细示出的,通道12的内壁12a形状做成使得其围绕螺旋推进器14、16的外部轮廓。螺旋推进器14、16通过电动机18经由机械传动装置21沿相反方向驱动转动,电动机18设有减速单元19,电动机18和减速单元19都被罩壳20覆盖,机械传动装置21设有常规密封装置22。
如图1所示,其中容纳有螺旋推进器14、16的通道12从通道12的上游入口端23向其下游出口端24稍微向下倾斜,倾斜角度有利地在2°至10°范围内,较佳地为4°。通道12的相对侧壁中的每个壁具有可连接到蒸汽源(未示出)的蒸汽喷射器25的阵列(图2)。较佳地是,每个阵列包括沿通道12的相应壁等距间隔开的六个喷射器25。各喷射器连接到气动针阀(未示出),该气动针阀可操作以能/不能使蒸汽馈送到通道内。在通道12内还安装有用于测量其中温度的温度传感器26(图2)。
通道12的下游端24通向揉捏腔27,该揉捏腔27具有两侧壁28a、28b、U形底壁30、上壁32、后壁34以及具有出口38的前壁36,其中一个侧壁28a设有可打开视察窗29。
两个水平的平行心轴44、46容纳在揉捏腔内并由减速齿轮40驱动,减速齿轮40锚固到后壁34并由电动机42驱动以预定速度沿相反方向转动。从心轴44、46突出的两个短曲柄48、50在弯曲臂52、54的中间位置铰接到相应的弯曲臂52、54。两臂彼此纵向偏移并在其上端56处彼此铰接。因而,两臂52、54与曲柄48、50协作以形成沿镜像轨迹驱动两臂下端的连杆机构。平行铲58、60从两臂52、54下端沿背向通道12的方向以直角突出到揉捏腔26内,并大致与腔27的整个长度配合。两臂52、54的竖直尺寸彼此不同以在其轨道运动期间防止两铲58、60彼此干涉。铲60较佳地具有几个横向梳状齿62(图2)。
与通道12内的喷射器25相同的两个蒸汽喷射器63a、63b(图1、3)分别安装在腔27的后壁34和前壁36上。蒸汽喷射器63a、63b可连接到上述蒸汽源并由中央单元CU基于第二温度传感器65进行控制。通向腔27的热水馈送管道67可连接到热水源(未示出),如果需要,该热水源可根据情况偶尔将少量热水馈送到腔内。
通道12在其上游端22经由大致垂向装载管道64装载凝乳(先前已通过例如未示出的常规刀片式切碎机切碎)。
螺旋推进器和蒸汽喷射器的运行较佳地由控制单元CU基于从温度传感器(在图2、3中仅示意性地示出)接收的信息以本领域技术人员已知的方式进行控制。
上述设备的运行如下。将切碎的凝乳通过管道64装载到通道12内。螺旋推进器14、16通过沿相反方向转动逐渐朝向通道的出口端24输送凝乳,且同时主要通过压缩对凝乳施加初步揉捏作用。在该阶段,喷射器25将蒸汽馈送到通道12内,由此使凝乳逐渐变热并变成可拉丝,即可塑。因为蒸汽更容易被糊膏然后被水吸收,则该基于蒸汽的加热系统显著减少由通道内糊膏释放的水量,于是增加产品收得率。此外,由于通道12的倾斜,释放的水由于重力向下游流动而不是停滞在通道12的第一部分内(随后积聚以排放)。该情况有利于在通道12内的处理下水被糊膏均匀吸收。较佳地是,蒸汽的喷射由控制单元CU基于由温度传感器26接收的信号以对本领域的技术人员显而易见的方式进行自动控制。
未被通道12内的糊膏吸收的任何部分的水流入揉捏腔27,在揉捏腔27中糊膏在由螺旋推进器受到的部分揉捏作用之后,经受进一步的揉捏作用。摇臂52、54不像主要通过压缩作用的螺旋推进器,通常基于由温度传感器65接收的信号在通过喷射器63a、63b进一步馈送蒸汽的同时提起和拉伸糊膏。如果需要,糊膏的湿度可通过经由管道67供给少量热水而进一步增加。
通过调整揉捏过程中(从管道67)供给的蒸汽和水的量,可得到具有大致在45%至65%范围内所要求湿度的帕斯塔菲拉塔奶酪。实践中,业已发现用本发明的设备生产的帕斯塔菲拉塔保持所有的揉捏水,从而不需要排放。此外,本发明的设备从能耗方面来看也是有利的,因为基于蒸汽的加热系统不需要加热大量的水,这些水在已知机器中大部分都损失了。
从说明书中,显然本发明的设备实现生产软的潮湿帕斯塔菲拉塔而不排放水的公开的范围,因此提高产品收得率和产品质量。此外,上述设备能够连续运行,因为馈送到腔27的糊膏已经被螺旋推进器揉捏,且因此仅需要最后的揉捏,可不中断糊膏的馈送来进行最后的揉捏。
当然,根据本发明的揉捏设备的上述较佳实施例可作很大程度的改变。例如,通道12内以及腔27内摇臂以及蒸汽喷射器的数量和布置可以变化。此外,蒸汽喷射器可具有适于进行所要求的功能的任何已知结构。此外,具有摇臂的多个揉捏腔可在通道的下游串联布置。

Claims (8)

1.一种凝乳揉捏设备,其特征在于,所述凝乳揉捏设备包括:
-揉捏通道(12),所述揉捏通道(12)从上游入口端(23)向下游出口端(24)向下倾斜,所述上游入口端(23)打开以接收所要揉捏的凝乳,所述下游出口端(24)打开以卸载所述凝乳,
-一对相反的螺旋推进器(14、16),所述一对相反的螺旋推进器(14、16)可枢转地并排支承在所述揉捏通道(12)内并可操作地连接到电动机装置(18)以沿相反方向转动并将所述凝乳从所述上游端(23)移动到所述下游端(24),
-第一蒸汽吹送装置(25),所述第一蒸汽吹送装置(25)朝所述揉捏通道(12)开放,
-至少一个揉捏腔(27),所述至少一个揉捏腔(27)具有各摇臂并布置在所述揉捏通道(12)的所述出口端以接收从所述出口端卸载的凝乳。
2.如权利要求1所述的设备,其特征在于,所述通道(12)以范围2°至10°的角度(a)倾斜。
3.如权利要求2所述的设备,其特征在于,所述角度(a)为4°。
4.如权利要求1至3中任一项所述的设备,其特征在于,所述第一蒸汽吹送装置在所述通道(12)的相对的侧壁中的每个侧壁上包括喷射器(25)的阵列,所述喷射器(25)可连接到蒸汽源并可操作以使蒸汽能够/不能够喷射到所述通道(12)内。
5.如权利要求4所述的设备,其特征在于,每个阵列包括沿所述通道的相应侧对准的六个所述蒸汽喷射器。
6.如权利要求4所述的设备,其特征在于,所述设备包括第一温度传感器(26),所述第一温度传感器(26)布置成探测所述通道(12)内的温度并连接到控制单元(CU),所述控制单元(CU)编程成根据由所述第一温度传感器(26)探测的温度向所述喷射器发出指令。
7.如权利要求1所述的设备,其特征在于,所述设备包括第二蒸汽吹送装置(63a、63b),所述第二蒸汽吹送装置(63a、63b)朝所述揉捏腔(27)开放并可连接到蒸汽源并可操作以使蒸汽能够/不能够喷射到所述腔(27)内。
