一种杏鲍菇汁及其制备方法,杏鲍菇汁是在杏鲍菇全天然鲜榨汁内,按榨汁重量加入0.1~0.2%的果胶酶,经酶解、过滤后制成的100%的杏鲍菇全天然鲜榨汁。本发明是100%的杏鲍菇全天然鲜榨汁,它既能保留杏鲍菇的全部营养成分,又能保持原有的滋气味;人们能作为饮料直接饮用,使杏鲍菇所具有的降血脂、降胆固醇、促进胃肠消化、增强机体免疫能力、防止心血管病等功效能得到更广泛地利用;利用本制备方法制备的鲜榨杏鲍菇汁在贮存三个月后仍无致病菌和腐败菌检出,符合卫生标准。

技术领域
本发明涉及一种食用菌的综合利用, 尤其涉及一种杏鲍菇汁及其制备方法。
背景技术
杏鲍菇,又名刺芹侧耳,是近年来开发栽培成功的食用菌新品种;其菇体具有杏仁香味,肉质肥厚,口感鲜嫩,味道清香,营养丰富,经研究它还是一种集食用、药用、食疗于一体的珍稀菌种,具有抗衰老、 抗肿瘤、 提高免疫力,降血脂、降胆固醇、促进胃肠消化、防止心血管病等功效,但是目前仍局限于只作为一种食用菌做成菜吃,使这种集食用、药用、食疗于一体的珍稀菌种并没有发挥其药用和食疗的功能,没有得到更广泛更方便的利用。
发明内容
本发明的目的在于提供一种杏鲍菇汁及其制备方法。使人们能在日常生活中在吃饮料的同时就能服用这种药用、食疗于一体的珍稀菌种,使这种珍稀菌种更广泛更方便得到利用;以促进人类的身体健康。
本发明的杏鲍菇汁是在杏鲍菇全天然鲜榨汁内,按榨汁重量加入0.1~0.2%的果胶酶,经酶解、过滤后制成的100%的杏鲍菇全天然鲜榨汁。
本发明的杏鲍菇汁的制备方法,包括以下步骤:
(1)杏鲍菇预处理:用流动水通过毛刷去除果品表面的泥沙、灰尘及微生物,并挑选去除腐烂、破碎及异物;将合格的杏鲍菇破碎至3-10㎜的小块;
(2)采用常规手段将新鲜杏鲍菇榨成汁液;
(3)按菇汁重量加入0.1~0.2%的果胶酶;在30~50℃酶解0.5~1小时后,再经2400~3500rpm离心10~20分钟;
(4)采用陶瓷膜错流过滤工艺对上述得到的果汁进行错流微滤,得到新鲜杏鲍菇清液和含菇肉的菇浆;
(5)将新鲜杏鲍菇清液经过无菌冷灌装即得到鲜榨杏鲍菇清汁。
本发明的优点:本产品为100%的杏鲍菇全天然鲜榨汁,这种全天然鲜榨汁其口味清香、纯正、味道好;它既能保留杏鲍菇的全部营养成分,又能保持原有的滋气味;人们能作为饮料直接饮用,使杏鲍菇所具有的降血脂、降胆固醇、促进胃肠消化、增强机体免疫能力、防止心血管病等功效能得到更广泛地利用;其制备方法简单,加入果胶酶能使菇汁中的果胶质溶解、絮凝,使果汁易滤而且滤液澄清;菇汁的酶解还能对多种细菌有抑制作用,尤其对金黄色葡萄球菌和大肠杆菌最为明显,又经常温下采用陶瓷膜错流过滤;既保持了杏鲍菇原有的营养和风味,其对黄色微球菌的除菌率可达9个对数值,酶菌、酵母菌和嗜温菌的细菌总数都小于10CFU/g,大肠杆菌总数小于0.3CFU/g,利用本工艺生产的鲜榨杏鲍菇汁在贮存三个月后仍无致病菌和腐败菌检出,符合卫生标准。
具体实施方式
以下结合实施例对本发明作进一步说明。
实施例1:
(1)取100公斤杏鲍菇,用流动水通过毛刷去除果品表面的泥沙、灰尘及微生物,并挑选去除腐烂、破碎及异物;将合格的杏鲍菇破碎至3-10㎜的小块;
(2)采用常规手段将新鲜杏鲍菇榨成汁液;
(3)加入0.1公斤果胶酶;在35℃酶解1小时后,再经2400~3500rpm离心10~20分钟;
(4)采用陶瓷膜错流过滤工艺对上述得到的果汁进行错流微滤,得到新鲜杏鲍菇清液和含菇肉的菇浆;
(5)将新鲜杏鲍菇清液经过无菌冷灌装即得到鲜榨杏鲍菇清汁。
实施例2:

(4)采用陶瓷膜错流过滤工艺对上述得到的果汁进行错流微滤,得到新鲜杏鲍菇清液和含菇肉的菇浆;
(5)将新鲜杏鲍菇清液经过无菌冷灌装即得到鲜榨杏鲍菇清汁。

1.一种杏鲍菇汁,其特征在于,是在杏鲍菇全天然鲜榨汁内,按榨汁重量加入0.1~0.2%的果胶酶,经酶解、过滤后制成的100%的杏鲍菇全天然鲜榨汁。
2.一种杏鲍菇汁的制备方法,其特征在于,包括以下步骤:
  (1)杏鲍菇预处理:用流动水通过毛刷去除果品表面的泥沙、灰尘及微生物,并挑选去除腐烂、破碎及异物;将合格的杏鲍菇破碎至3-10㎜的小块;
 (2)采用常规手段将新鲜杏鲍菇榨成汁液;
 (3)按菇汁重量加入0.1~0.2%的果胶酶;在30~50℃酶解0.5~1小时后,再经2400~3500rpm离心10~20分钟;
(4)采用陶瓷膜错流过滤工艺对上述得到的果汁进行错流微滤,得到新鲜杏鲍菇清液和含菇肉的菇浆;
(5)将新鲜杏鲍菇清液经过无菌冷灌装即得到鲜榨杏鲍菇清汁。
