技术领域
本发明涉及包含铁和锌的含脂肪食用乳液(edible emulsion)。
背景技术
含脂肪食用乳液如人造奶油具有相对长的储藏期限,例如通常为1-3个月。在所述食用乳液的使用期间,乳液通过桶的打开暴露于空气,并且通过有规律地将其从冰箱中取出然后再放回冰箱中经历温度循环。由于长储藏期限,所述食用乳液通常暴露于空气和不同的温度,发生几个过程。这其中的一个是含脂肪乳液的黄化。开始时,含脂肪乳液为白色的,或者可能是非常淡的黄色,然而随着时间的推移以及在使用过程中,所述乳液变得越来越黄。这种黄色着色被消费者认为是新鲜度的降低,所述乳液被认为是旧的。
因此本发明的一个目的是提供随着时间推移具有较少黄化的含脂肪乳液。本发明的另一目的是提供甚至在几个星期的储藏和使用时间后仍然被认为新鲜的含脂肪乳液。此外,本发明预见了具有良好感官特性的含脂肪乳液。另一目的是提供含脂肪乳液,该含脂肪乳液提供健康的矿物质和脂肪酸。
发明内容
一个或多个以上目的通过含5-85wt%脂肪、0.002-0.3wt%锌和0.003-0.7wt%铁的食用乳液得以实现。
出人意料地发现具有铁和锌的乳液在一定时间后具有较少的黄化。
具体实施方式
本发明涉及一种含脂肪的食用乳液。
根据本发明所述的乳液包含5-85wt%的脂肪,优选10-70wt%,更优选20-60wt%,最优选30-40wt%脂肪。所述脂肪主要由甘油三酯组成。所述脂肪可以是单种脂肪或者是脂肪的组合。
所述脂肪或脂肪共混物可包括植物或动物脂肪,其可以是氢化的、互酯化的或分级的,及它们的组合。合适的动物脂肪可由乳脂(butterfat)或者动物脂(tallow)组成。合适的植物脂肪,例如,可以选自包括豆油,葵花籽油,棕榈仁油,椰子油,棕榈油,菜籽油,棉籽油,玉米油,或它们的级分,或它们的组合的组。这些脂肪的或任选地与其它脂肪的互酯化脂肪共混物也包含在本发明之内。
本发明特别适用于其中所述脂肪包括多不饱和脂肪酸(PUFA)的乳液。由于它们的不饱和水平,PUFA对脂肪氧化更敏感。优选的PUFA可以选自包括亚油酸,亚麻酸,α-亚麻酸(ALA),二十二碳六烯酸(DHA),二十二碳五烯酸(DPA),二十碳五烯酸(EPA),二十碳四烯酸和十八碳四烯酸(stearidonic acid)的组。优选的PUFA是ω-6或ω-3脂肪酸。其它优选的PUFA是长链PUFA(LC-PUFA)。最优选的PUFA是ALA,DHA和EPA。
在一个优选的实施方式中至少20wt%的所述脂肪为PUFA,更优选至少30wt%,甚至更优选超过40wt%,最优选超过50wt%的所述脂肪是多不饱的。
优选地,本发明所述食用乳液的脂肪的至少2wt%为ω-3脂肪酸,更优选至少5wt%,最优选至少10wt%。在一个优选实施方式中,本发明所述食用乳液基于脂肪包含2-40wt%,更优选5-30wt%,最优选7-20wt%的ω-3脂肪酸。
适合地,本发明食用乳液的脂肪的至少0.3wt%为DHA和/或EPA脂肪酸,更适合地为大于1wt%,最适合地大于2wt%。适合地,本发明的食用乳液基于脂肪水平含有0.5-25wt%的EPA和/或DHA脂肪酸,优选1-15wt%,更优选2-10wt%,最优选3-7wt%。
根据本发明的合适实施方式提供乳液,其中在每日食用量(daily serving size)中存在至少30毫克EPA和DHA。在每日食用量中更合适地存在至少60毫克,更合适100毫克,更合适150毫克,甚至至少500毫克的EPA和/或DHA。一种最合适的实施方式提供乳液,在每日食用量中具有30-1500毫克,优选50-1000毫克,更优选150-500毫克,最优选200300毫克DHA和/或EPA。
对于含脂肪乳液,合适的每日食用量为每天10-50克乳液,更优选每天15-40克,最优选每天20-30克。
优选地,本发明所述的食用乳液具有良好的融化行为。融化行为影响乳液的感官特性。如果所述乳液融化得不足够快,就会变得存在蜡状口感,这是不被消费者欢迎的。
此外,尽管存在带有不希望风味的矿物盐,合适地,本发明的食用乳液整体上具有适合产品的良好味感印象(taste impression)。所述乳液优选在口中具有良好的融化行为,并且奶油和/或奶制品味道(creamy and/or dairy taste)是受欢迎的。
所述含脂肪乳液还含有铁和锌。为了本发明的目的,量为铁和锌离子的量,不是盐或络合物的量。添加的铁源量将取决于反离子或络合物和水合。例如,本发明乳液中存在0.003-0.7wt%的铁。如果使用焦磷酸铁作为铁源,则需要0.012-2.8wt%的焦磷酸铁。同样,对于锌,对于0.002-0.3wt%的锌,需要0.0025-0.375wt%的氧化锌。
合适的铁源是碳酸亚铁,柠檬酸亚铁,柠檬酸亚铁铵,葡萄糖酸亚铁,富马酸亚铁,二磷酸铁钠(ferric sodium diphosphate),乳酸亚铁,硫酸亚铁,二磷酸铁,焦磷酸铁,蔗糖铁(ferric saccharate),乙二胺四乙酸亚铁,元素铁。
合适的锌源是乙酸锌,氯化锌,柠檬酸锌,葡萄糖酸锌,乳酸锌,氧化锌,碳酸锌,硫酸锌。
在一个优选的实施方式中,铁的量为0.02-0.35wt%,更优选0.1-0.2wt%。
在另一个优选实施方式中,锌的量为0.02-0.15wt%,更优选0.05-0.1wt%。
在一个优选实施方式中,所述铁源是白色或者无色的。在另一个优选实施方式中,所述锌源是白色或者无色的。
本发明的乳液可以包含增稠剂。由于稳定性原因,在乳液中包括增稠剂可能是有用的,例如,通常通过添加增稠剂改善含有20-30wt%脂肪的非常稀的涂抹料(very low spreads)。是否应该添加增稠剂以及以多少量添加取决于例如稳定性和应用的因素,并可由本领域技术人员确定。
增稠剂可以是任何已知的增稠剂,优选选自包含树胶(gums),如黄原胶,瓜尔胶,和刺槐豆胶,角叉菜胶,多糖,藻酸盐,果胶,淀粉,改性淀粉和明胶的组。
在根据本发明的优选食品中,水相包含天然淀粉或改性的完全胶凝化的淀粉,其可以是熟的(cook-up)或预凝胶化的,选自任何主要的淀粉组:小麦、马铃薯、大米、玉米、糯米或蜡质种玉米。
合适淀粉的例子包括RemyriceTM,ResistamylTM,MerigelTM,Purity LFSTM。
根据本发明所述的食品中淀粉的量在一定程度上取决于所选淀粉的类型,优选为0.2-5wt%,更优选0.7-3wt%,最优选1-2wt%。
在一个优选的实施方式中,所述乳液是脂肪连续的。在另一个优选的实施方式中,所述乳液不是双重乳液(duplex emulsion)。甚至更优选所述乳液是单重乳液(single emulsion)。本发明一个优选实施方式是涂抹料(spread)。优选地,本发明中的乳液不是巧克力或含巧克力的乳液。
为了保证水相在连续脂肪相里的均匀分布,分散的水相的液滴尺寸分布D3,3优选小于8μm,更优选为4-8μm,更优选甚至小于4μm。确定D3,3的方法在实施例中说明。将理解的是,液滴尺寸能够通过调整装置操作中的工艺条件进行控制:例如,刮面式热交换器中的较高转速将产生相应较小的水液滴尺寸分布。
此外,本发明所述的食用乳液可以包含乳化剂。所述乳化剂优选是油包水乳化剂。更优选该乳化剂选自包含蒸馏的单酸甘油酯,单酸甘油酯的柠檬酸酯,单酸甘油酯的二乙酰基乙酸酯,单酸甘油酯的乳酸酯,单酸-二酸甘油酯,聚甘油聚蓖麻醇酸酯(polyglycerol polyricinoleate),脂肪酸的聚甘油酯或者脂肪酸的脱水山梨糖醇酯的组。
最优选的乳化剂为蒸馏的单酸甘油酯(distilled monoglyceride)。甚至更优选的是具有不饱和脂肪酸的单酸甘油酯,或含饱和脂肪酸残基的单酸甘油酯与含不饱和脂肪酸残基的单酸甘油酯的组合。
乳化剂的量取决于所选乳化剂的种类和效率,且可以由本领域技术人员决定。影响得到储藏稳定的产品所需的乳化剂量的其它因素为脂肪的量和增稠剂的量。作为一般的指导,乳化剂的量优选为0.05-1.5wt%,更优选0.1-0.7wt%,最优选0.15-0.5wt%。
水相的pH可以设定为所需的值,尤其是来影响酸性或碱性味感印象以及来影响微生物稳定性。优选地,本发明食品中水相的pH为4.3-5.5。
任选地,将一些蛋白质加入本发明的产品中。可以添加蛋白质来有利地影响所述食品的味道、风味和营养价值,也可以加入蛋白质用以在所述组合物被用作浅油炸(shallow frying)介质时增加食物的褐变。优选地,蛋白质源选自包含奶粉例如脱脂奶粉,酪乳粉(butter milk powder),酪蛋白酸钠、酸乳清(sour whey)、变性乳清或它们的组合的组。
优选地,所述乳液中存在至少0.3wt%的蛋白质,更优选0.3-1wt%。
在所述乳液的一个优选实施方式中不存在蛋白质。
本发明的乳液任选包含其他成分,例如防腐剂、维生素、味道和风味组分、着色剂(如β-胡萝卜素)、抗氧化剂。
本发明的乳液能够通过任何生产此类产品的适宜方法来制备。
实验
D3,3值测定和E-σ:
将样品填充到直径10mm的NMR管中至15mm高度,在20℃热平衡30min。基于限制扩散的液滴尺寸使用Bruker Minispec MQ20经由pfg-NMR得到。所述技术的细节由Goudappel等进行了讨论(Journal of Colloid and Interface Science239,(2001)535-542)。测量产生了体积加权几何平均直径d3,3和液滴尺寸分布宽度的值,当作为直径σ的对数的函数作出曲线时(E-σ)。一式三份进行测量,结果用平均d3,3值表示。液滴尺寸的定义由Alderliesten(Particle and ParticleSystems Characterization 7(1990)233-241,和同上8(1991)237-241)给出。
实施例的加工
在容器中,在约60℃的温度,制备脂肪和脂溶性成分的混合物。在另一单独容器中,制得水和水溶性成分的混合物,其被加热至92℃的温度25分钟。将该混合物冷却至60℃,随后作为水连续乳液在60℃在预混罐里与油相混合,接下来在一系列尺寸和能量需求适宜产出脂肪连续的最终产品并实现能够在10℃左右在适合包装材料中容易地包装的塑性结构的A-和C-unitstm中冷却并剪切。
实施例1-2:黄度测定
黄度测定
在25℃将食品在塑料容器中储藏9周。储藏后测定黄度。黄度用MinoltaCR300色度仪测定。该色度仪由校准片(no14033127)校准。测定产品并给出x,y和z值,从这些值使用下面的公式可以计算黄度指数(Yi):
Yi=100×(1.28×x)-(1.06×z)/y
较高Yi反映出较多黄色;较低Yi反映出较多白色。

对照产品是含有表1中的成分但没有铁和锌的产品。
储藏9周,测定含有和不含铁和锌的产品的黄度。Yi值由两次测定平均(表2)。第一和第二实验单独进行,但是在每个实验中含有铁和锌的产品和对照产品处理相同。

如从每次实验可以看出的那样,含有铁和锌的产品具有较低的Yi值,表示黄色较少。而且,经过目视检查,含有铁和锌的产品也被认为比不含铁和锌的产品更新鲜。
实施例4-8:黄度测定
黄度测定
食品在25摄氏度储藏在塑料容器里。储藏后测定黄度。使用Digi EyeDigitizer(ex VeriVide Ltd,UK)测定黄度。所述Digitizer用数码色彩表校验器No.DE00234日期2007/07校正。测定产品并给出x,y和z值,从这些值使用下面的公式可以计算黄度指数(Yi):
Yi=100×(1.28×x)-(1.06×z)/y
较高Yi反映出较多黄色;较低Yi反映出较多白色。

实施例4-8使用与实施例4相同的基础混合物,仅仅在微粒化焦磷酸铁和氧化锌的量上不同。
在25摄氏度储存1周和5周后测定黄度(表4)。

如从实施例中可以看出的那样,含铁和锌的产品具有较低的Yi值,表示黄色较少。含铁和锌的产品也被发现与含铁产品所预期的相比显示更少的异味(offtaste)(即,更少的金属味道),已知铁给产品带来金属异味。
Claims (9)
1.食用乳液,包含5-85wt%的脂肪、0.003-0.7wt%的铁和0.002-0.3wt%的锌。
2.如权利要求1所述的食用乳液,其中铁的量为0.02-0.35wt%。
3.如权利要求1或2所述的食用乳液,其中锌的量为0.02-0.15wt%。
4.如权利要求1-3中任意一项所述的食用乳液,其中脂肪的量为20-70wt%。
5.如权利要求1-4中任意一项所述的食用乳液,其中脂肪的量为25-60wt%,优选30-40wt%。
6.如权利要求1-5中任意一项所述的食用乳液,其中所述乳液是脂肪连续的,具有分散的水相。
7.如权利要求6所述的食用乳液,其中所述分散的水相的液滴尺寸分布D3,3小于20μm,优选小于8μm,更优选小于4μm。
8.如权利要求1-7中任意一项所述的食用乳液,其中EPA和/或DHA脂肪酸的量基于脂肪水平为0.5-25wt%。
9.如权利要求1-8中任意一项所述的食用乳液,其中不存在蛋白质。
