一种植物防腐剂
技术领域:本发明涉及食品添加剂,具体是一种食品防腐剂,更具体地说是一种应用于蔬菜、水果的抗氧化防腐剂组合物。
背景技术:食品防腐剂大多分为杀菌剂类和抗氧化剂类。传统的抗氧化剂如:二丁基经基甲苯(BHT),丁基经基茵香醚,均为脂溶性抗氧化剂;而水溶性抗氧化剂常用的种类是抗坏血酸类,但抗坏血酸带酸味,其钠盐有成味且在空气中易氧化变色,影响保鲜食品的色泽。发明内容本发明的目的在于提供一种具有较好抗氧化效果、不影响被保鲜食品色泽稳定性的、水溶性的食品防腐剂。本发明提供的一种植物防腐剂,它的组分及其含量按重量份数计包含:亚硫酸钠70-85,酚酞5-10,碳酸氢钠5-20。所述的食品防腐剂,还可以含有苯甲酸钠5-15,用于杀菌防腐。本发明植物防腐剂在使用时用水最好是蒸馏水溶解稀释至总浓度为0.1-0.29几的保鲜液。本发明植物防腐剂用在蔬菜、水果等的保鲜,效果较好。与现有技术相比,本发明配方独特,配制简便,使用安全,有良好的抗氧化保鲜作用,特别是易溶于水,用量少,可用于水果、蔬菜等的保鲜,尤其适用作蘑菇等的抗氧化防腐剂。具体实施方式下面结合实施例子对本发明做进一步说明。实施例1一并为防腐剂配制实施例,实施例5-8为防腐剂应用实施例。实施例1.取亚硫酸钠75份,酚酞5份,碳酸氢钠20份,混合研磨即可使用。实施例2.取亚硫酸钠78份,酚酞7份,碳酸氢钠15份,混合研磨即可使用。实施例3.取亚硫酸钠80份,酚酞10份,碳酸氢钠5份,苯甲酸钠5份混合研磨即可使用。实施例4.取亚硫酸钠70份,酚酞7份,碳酸氢钠17.6份,苯甲酸钠5.4份混合研磨即可使用。实施例5.按实施例4取防腐剂固体总量0.1429溶解于1000ml蒸馏水中,搅拌,使其完全溶解制得保鲜液,用该保鲜液对苹果进行保鲜试验。称市售苹果五斤,用自然方法(即不用任何工具,用手扳开,以免代入金属离子干扰)一分为二,其中一份在蒸馏水中浸泡1-3min后捞出,室内自然放置;另一份在配置好的保鲜液中浸泡1-3min后捞出,与第一份在同一条件下放置。通过观察,经过约36小时之后,其中蒸馏水浸泡的苹果扳开部位明显变褐色;而经过保鲜液浸泡的苹果能保持较好的原样,表面仍较光洁,在一周后才会发生明显的褐变。实施例6.按实施例4取防腐剂固体总量0.1429溶解于1000ml蒸馏水中,搅拌,使其完全溶解制得保鲜液,用该保鲜液对蘑菇进行保鲜试验。称市售新鲜草菇、金针菇各2斤,用清水洗两次,使蘑菇表面干净。各分两份,每一种的其中一份在室内自然放置;另一份在配置好的保鲜液中浸泡1-3min后捞出,与第一份一块放置。通过观察,经过约12小时之后,其中没被保鲜液浸泡的那份表面明显变褐色;而经过保鲜液浸泡的那份保持较好的原样,表面仍较光洁。在48小时之后,被保鲜液浸泡过的那份蘑菇表面出现一定的褐色。实施例7.按实施例3取防腐剂固体总量0.1429溶解于1000ml蒸馏水中,搅拌,使其完全溶解制得保鲜液,用该保鲜液对蘑菇进行保鲜试验。对实施例6中所用的蘑菇按实施例6相同的方法进行试验,结果显示:经过约12小时之后,其中没被保鲜液浸泡的那份表面明显变褐色;而经过保鲜液浸泡的那份保持较好的原样,在70小时之后,被试液浸泡过的那份蘑菇表面出现一定的褐色。实施例8.按实施例1取防腐剂固体总量0.1429溶解于1000ml蒸馏水中,搅拌,使其完全溶解制得保鲜液,用该保鲜液对苹果进行保鲜试验。实验方法同实施例5,结果显示:经过约30小时之后,其中蒸馏水浸泡的苹果扳开部位明显变褐色;而经过保鲜液浸泡的苹果能保持较好的原样,表面仍较光洁,在5天后发生明显的褐变。

1.一种植物防腐剂,它的组分及其含量按重量份数计包含:亚硫酸锌70份,酚酞10份,碳酸氢钠5份。
2.按照权利要求1所述的一种植物防腐剂,其特征在于含有苯甲酸钠5-15。
3.按照权利要求1或2所述的植物防腐剂在水果、蔬菜保鲜中的用途。
