Abstract
本发明涉及含有碳水化合物的功能性饮料,其含有至少一种蛋白质水解产物和异麦芽酮糖,还涉及异麦芽酮糖和/或吡喃果糖-5-葡糖苷在含有蛋白质水解产物的功能性饮料中的用途。
Description
技术领域
本发明涉及一种含有碳水化合物的功能性饮料,其含有至少一种蛋白水解物和至少一种选自由吡喃果糖-5-葡糖苷和异麦芽酮糖组成的群组中的蔗糖异构体,还涉及异麦芽酮糖和/或吡喃果糖-5-葡糖苷在含有碳水化合物的功能性饮料中的应用。
背景技术
功能性饮料,如能量饮料、运动饮料、健身饮料或还有软饮料越来越流行。由于特殊的成分,这种饮料的服务目的不仅在于提供液体,还给身体提供例如食物增补剂或功能增强剂。WO2003/017788揭示了一种软饮料或运动饮料,含有植物提取物和异麦芽酮糖。所述的饮料的特征在于具有清凉的口感。WO2004/084655A1公开的软饮料、能量饮料或运动饮料含有有益的异麦芽酮糖和海藻糖,因为其能使得导致消费者体内的血糖反应降低。
含蛋白质的功能性饮料也已经被公开过。然而,在大多数情况下,这些饮料消化性差同时具有消费者通常感到讨厌的口感。
因此,对于未来的功能性饮料有更多的要求。这些饮料一方面在功能上具有恢复和增强消费者的身体耐受力的特色。另一方面的特色在于其生产相对便宜,尤其在于其口感是令消费者感到愉快的。此外,该饮料应该看上去是诱人的,如应该是尽可能清亮的,并能在储存中保持稳定的。
发明内容
本发明解决的技术问题是,提供一种含有碳水化合物的功能性饮料,其含有至少一种溶于液体介质中的蛋白质水解产物和至少一种蔗糖异构体,该蔗糖异构体具有比蔗糖低的血糖生成指数,并且选自由异麦芽酮糖和吡喃果糖-5-葡糖苷组成的群组。本发明所述的饮料除了含有蛋白质水解产物外,还含有下述中的一种:a)异麦芽酮糖,或b)吡喃果糖-5-葡糖苷(明串珠菌二糖),或c)异麦芽酮糖和吡喃果糖-5-葡糖苷。在本发明一实施例中,饮料中同时含有吡喃果糖-5-葡糖苷和异麦芽酮糖,吡喃果糖-5-葡糖与异麦芽酮糖的比例较佳的为1:99wt%~99:1wt%,更佳的为30:70wt%~70:30wt%(每个都为基于两异构体的总干燥固体含量)。
本发明中,所述的功能性饮料理解为,除了能够满足消费者对液体的需要外,该饮料还可以具有至少一种消费者身体中的其他的生理功能,即,特别的是具有保持或改善消费者生理状态,尤其是健康状态相关的生理功能。因此,所述的功能性饮料应该尤其是指用于改善肌肉品质、预防肌肉损伤、消除肌肉损伤、补偿对能量需求的增加、补偿对矿物质或维生素需求的增加、改善脂肪代谢、预防或治疗疾病,尤其是具有最小可能增加血糖水平的饮料,如具有最低的血糖生成指数。
本发明令人惊奇地提供了一种含有碳水化合物的功能性饮料,蛋白质水解产物的存在,有利地确保了产生、再生或恢复肌肉力量和/或防止肌肉损伤。本发明饮料的这种有益的合成代谢效果使其特别适合老年人、妇女、肥胖者、运动员和其他需要特殊饮食的人群。此外,还有出现了令人惊讶的免疫刺激效果,这可能该归因于在使用的蛋白质水解产物中有某些氨基酸序列或寡短肽序列的存在。异麦芽酮糖,6-O-α-D-吡喃葡糖基-果糖(也称为帕拉金)是一种甜味剂,其甜味大约是蔗糖的一半。它也被用于运动员的特殊食物中,以维持氧化代谢在一定水平,由于异麦芽酮糖的延时降解仅仅发生在小肠范围内。异麦芽酮糖被人体小肠壁中的葡萄糖苷酶延时降解,降解产物葡萄糖和果糖被吸收。相对于可快速消化的碳水化合物而言,这导致血糖水平缓慢的升高。因此,不同于可被快速消化的高血糖生成物质,异麦芽酮糖几乎不需要胰岛素来进行新陈代谢。在本发明所述的含有碳水化合物的饮料中使用异麦芽酮糖,使所述的饮料成为低血糖生成饮料,该饮料结合了给消费者提卓越的氨基酸补给的饮料的优点和低血糖生成饮料的优点。与多羟基化合物相比,异麦芽酮糖不会造成轻度腹泻的后果。令人惊奇的是,异麦芽酮糖还能遮盖掉蛋白水解产物产生的让许多消费者感到不诱人的味道,尤其是在经过了较长时间贮藏的饮料中。与蔗糖相比,吡喃果糖-5-葡糖苷,如同异麦芽酮糖,是低血糖生成蔗糖异构体。与含有果糖/葡萄糖的饮料比较,本发明所述的含有碳水化合物的功能性饮料在相同的甜度生成较少的梅拉德(Maillard)产物。最后,本发明所述的饮料的另一优点是其中的蛋白质水解物完全可溶解的,因此得到的饮料是澄清的并且是酸稳定的。
在本发明一较佳的实施例中,所述的蛋白质水解产物为酪蛋白水解产物,尤其较佳的为从牛奶中的酪蛋白经过蛋白酶反应制得的酪蛋白水解产物。在一更佳的实施例中,所述的酪蛋白水解产物由平均长度不超过4个氨基酸残基的短链肽组成,尤其是由二肽和三肽。本发明中的酪蛋白水解产物优选水溶性的。在本发明一较佳的实施例中,它含有所有的20种必需氨基酸。本发明特别优选的酪蛋白水解产物的氨基酸成分如下:
*1)指天门冬酰胺酸与天门冬氨酸的含量
*2)指谷氨酸盐和谷氨酸的含量
在本发明另一较佳实施例中,所述的液体介质为水。在本发明另一较佳实施例中,所述的饮料中蛋白质水解物的含量为0.1-20wt%,较佳的为0.3~10wt%(均相对于饮料总质量)。在本发明另一较佳实施例中,本发明的功能性饮料中异麦芽酮糖的含量为0.1~20wt%,较佳的为0.3~10wt%(均相对于饮料总质量)。在本发明另一较佳实施例中,本发明的功能性饮料中吡喃果糖-5-葡糖苷的含量为0.1~20wt%,较佳的为0.3~10wt%(均相对于饮料总质量)。
在本发明一较佳实施例中,所述的饮料可以为速溶饮料、可乐类饮料、经肠溶液、清凉饮料、运动饮料、能量饮料、等渗透压饮料、软饮料或类似饮料。
本发明一较佳实施例涉及一种含有碳水化合物的功能性饮料,其还含有例如食用酸、食用盐、强效增甜剂、矿物质、微量元素、水果汁、抗氧化剂、稳定剂、调味料、香料或芳香物质、其他甜味剂、咖啡因、维生素、油脂或类似物。
本发明中,可以使用的强效增甜剂包括安赛蜜H、阿斯巴甜、甜菊苷、莫内林、甜蜜素、甜蜜素钠、三氯蔗糖、竹芋甜素(Thaumatin)、甘素、糖精、纽甜(Neotame)、柚皮苷二氢查耳酮、新橙皮苷二氢查尔酮、甘草甜素或这些物质中的两种或多种的混合物。
在本发明另一较佳实施例中,所述的饮料含有天然的和/或合成的色素,天然的和/或合成的维生素,矿物质和/或微量元素。
在本发明一更佳的实施例中,饮料中食用酸的含量为0.1~10wt%(相对于饮料总质量)。
在本发明另一较佳实施例中,饮料中强效甜味剂的含量为0.1~1wt%(相对于饮料总质量)。在本发明另一较佳实施例中,饮料中调味料、香料或芳香物质的含量为0.5~10wt%(相对于饮料总质量)。
本发明中,对含有蛋白质水解产物的饮料的味道的掩饰应被理解为是指比如含有蛋白质水解产物的组分的口感会被有效的降低,尤其是降低至无,如果本发明的饮料中的这种含蛋白质水解物的组分结合了异麦芽酮糖和/或吡喃果糖-5-葡糖苷,而不是对比试剂。在比如含有蛋白质水解产物的组分和对比甜味剂的具有统计相关意义的对比试验中,该口感被专业检测员认为是令人厌恶的或苦的。本发明较佳地使用异麦芽酮糖和/或吡喃果糖-5-葡糖苷掩盖本发明的饮料中存在的蛋白质水解产物组分的令人厌恶的口感,使得该口感被掩盖或无法辨认或是明显下降。
在本发明另一较佳的实施例中,本发明所述的饮料中除了异麦芽酮糖和/或吡喃果糖-5-葡糖苷外,不含任何其他糖类,尤其不含蔗糖、果糖、塔格糖和/或葡萄糖。较佳地,异麦芽酮糖和/或吡喃果糖-5-葡糖苷为在制备中存在的唯一的糖类,尤其是饮料中存在的唯一的甜味剂。
本发明中,术语增甜剂应被理解为是指为具有甜味的物质,添加于诸如食物或饮料中,能产生甜的口感。本发明中,所述的增甜剂细分为:一、糖,如异麦芽酮糖、蔗糖、葡萄糖或果糖,可被身体吸收并且具有甜味;二、“甜味剂”,即非糖类但仍然具有甜味的物质,其又能被细分为1)“糖替代物”,即为除了具有甜味外,还具有人体或生理学热值(被人体吸收的甜味剂)的增甜剂,以及2)“强效甜味物质”,即通常具有非常高的甜味,但通常不具有或具有很低的人体以及生理学热值的物质。
在本发明一较佳实施例中,本发明中所述的饮料是保护牙齿的、预防龋齿的和/或营养的。
在本发明的另一实施例中,饮料中使用异麦芽酮糖和/或吡喃果糖-5-葡糖苷时,同时还使用强效增甜剂和/或适当时还有糖类替代物,例如异麦芽糖醇或麦芽糊精、乳糖醇、麦芽糖醇、赤藻糖醇、木糖醇、甘露醇、山梨醇、麦芽糖醇糖浆、1,1-GPM(1-O-α-D-吡喃葡糖基-D-甘露醇),1,6-GPS(6-O-α-D-吡喃葡糖基-D-山梨醇)或1,1-GPS(1-O-α-D-吡喃葡糖基-D-山梨醇)。

Claims (32)
1.含有碳水化合物的功能性饮料,其含有至少一种溶于液体介质中的蛋白质水解产物以及至少一种蔗糖异构体,其中所述的蛋白质水解产物为酪蛋白水解产物并且由平均长度不超过4个氨基酸残基的短链肽组成,所述的蔗糖异构体为吡喃果糖-5-葡糖苷,或者为吡喃果糖-5-葡糖苷和异麦芽酮糖。
2.含有碳水化合物的功能性饮料,其含有至少一种溶解于液体介质中的蛋白质水解产物和吡喃果糖-5-葡糖苷。
3.如权利要求2所述的饮料,其中所述的蛋白质水解产物为酪蛋白水解产物。
4.如权利要求1或2所述的饮料,其中所述的液体介质为水。
5.如权利要求1或2所述的饮料,其中所述的饮料中含有相对于饮料总质量0.1-20wt%的蛋白质水解产物。
6.如权利要求1或2所述的饮料,其中所述的饮料中含有相对于饮料总质量0.1-20wt%的异麦芽酮糖。
7.如权利要求1或2所述的饮料,其中所述的饮料中含有相对于饮料总质量0.1-20wt%的吡喃果糖-5-葡糖苷。
8.如权利要求1或2所述的饮料,其中所述的饮料中含有相对于饮料总质量0.3-10wt%的蛋白质水解产物。
9.如权利要求1或2所述的饮料,其中所述的饮料中含有相对于饮料总质量0.3-10wt%的异麦芽酮糖。
10.如权利要求1或2所述的饮料,其中所述的饮料中含有相对于饮料总质量0.3-10wt%的吡喃果糖-5-葡糖苷。
11.如权利要求1或2所述的饮料,其中所述的饮料为清凉饮料或经肠溶液。
12.如权利要求1或2所述的饮料,其中所述的饮料为速溶饮料、可乐类饮料、运动饮料、等渗透压饮料或能量饮料。
13.如权利要求1或2所述的饮料,其中所述的饮料含有食用酸、食用盐、矿物质、水果汁、抗氧化剂、稳定剂、调味料、香料、维生素、麦芽汁和/或咖啡因。
14.如权利要求1或2所述的饮料,其中所述的饮料含有食用酸、食用盐、矿物质、水果汁、抗氧化剂、稳定剂、香料、维生素、麦芽汁、甜味剂和/或咖啡因。
15.如权利要求1或2所述的饮料,其中所述的饮料含有食用酸、食用盐、矿物质、水果汁、抗氧化剂、稳定剂、调味料、芳香物质、维生素、麦芽汁和/或咖啡因。
16.如权利要求1或2所述的饮料,其中所述的饮料含有食用酸、食用盐、矿物质、水果汁、抗氧化剂、稳定剂、芳香物质、维生素、麦芽汁、甜味剂和/或咖啡因。
17.如权利要求14所述的饮料,其中所述的甜味剂为强效增甜剂,所述的矿物质为微量元素。
18.如权利要求16所述的饮料,其中所述的甜味剂为强效增甜剂,所述的矿物质为微量元素。
19.如权利要求13所述的饮料,其中所述的饮料中食用酸的含量为相对于饮料总质量0.1~10wt%。
