本发明涉及一种木耳人参素饮品,属于一种新型的保健食品。
背景技术
食用菌精深加工产品是世界公认的营养保健食品。中国是全球实施黑木耳人工栽培产业化的唯一国家,吉林省则是长白山黑木耳天然、人工栽培产量和深加工最大的省份,占全国木耳及其木耳制品产量的50%以上。特别是吉林省的长白山林区出产的黑木耳,在全国仍至世界享有较高的声誉,它的食用和药用价值深受人们的重视。随着人们生活水平的提高,人们的营养、健康意识越来越强,对木耳及其综合制品的需求越来越大,但市场上能够满足人们这一需求的产品尚未开发出来。
目前,已知的已经开发和上市的木耳产品,有精选木耳、木耳粉、黑木耳营养餐、黑木耳饮料、黑木耳挂面等品种。上述产品基本上是以木耳为主原料,通过物理加工并添加其它成分后制作而成。其食用方法单一、微量元素种类少、营养成分吸收率低等特点。如:精选木耳和木耳粉,只是在木耳原料的基础上进行人工挑选、清洗、烘干后进行定量包装或碾制加工成粉状后定量包装上市,这种产品只是为消费者提供了物质精品,且其营养成份单一;黑木耳营养餐、黑木耳饮料、黑木耳挂面等产品,就其内在的成份来说,也只是在木耳粉的基础上,添加了各种类和规格的面粉、果汁制成,其营养价值仅仅局限于木耳及其有限的添加物质固有的营养成份,只是在保持木耳原有基本成份的基础上,通过增加部分营养微量成份后方便了消费者对木耳的食用需要。
发明内容
本发明的目的在于提供一种木耳人参素饮品,根据人体生理健康基本微量元素的需要和日常饮食的摄入量,结合人们日常饮食习惯,从满足人们日益增长的物质生活中健康、长寿的需要,满足人们日常生活中对饮食营养多样化的需求,满足人们随着生活水平提高后对保健的需求出发,经过对多种物质微量元素的研究和试验,通过科学方法配制而成。其营养价值远远超出了其它木耳制品的营养成份,并在保持木耳原有基本成份的基础上,通过增加更多的人体必需营养微量元素,实现了一品可摄入多种微量元素,改善生理机能、强身健体、益寿延年的目的。由长白山天然或人工栽培的黑木耳、燕麦、人参、蜂蜜、螺旋藻和浓缩果汁经过精细加工,科学配制而成。具有多元化维生素、营养全面、吸收率高的特点。木耳人参素饮品采用多种有机物质经过生物工程技术精细加工,按一定比例配制而成。在加工过程中,没有改变其原料物质的原有成份。加工合成后的木耳人参素饮品,具有更广泛的人体生理所需的营养成分。如:钙、镁、钠、钾、磷、碘、硒、铁、铜、锌、蛋白质矿物质,脂肪、碳水化合物、胡箩卜素、微生素,维生素B1、B2、B5、B6B11、B12、C、E,人参皂甙、葡萄糖、果糖、淀粉酶、脂肪酶、转化酶、β-胡萝卜素、γ-亚麻油酸(GLA)、叶绿素A、叶酸,此外还含有大量微量元素、纤维素以及维他命B群。
本发明的技术方案是这样实现的:一种木耳人参素饮品,其配方由以下原料(按重量份数)组成:木耳20~35、人参1~2.5、燕麦35~45、蜂蜜10~25、螺旋藻5-15、浓缩果汁300-3000。
长白山黑木耳又称木耳、细木耳,是一种营养价值较高的山珍食品。黑木耳不仅营养丰富,而且具有较高的药用价值,自古有“益气不饥,润肺补脑,轻身强志、活血养颜”等功效,并能防治痔疮、痢疾、高血压、血管硬化、贫血、冠心病、产后虚弱等病症,它还具有清肺、洗涤胃肠的作用。特别是近年来科学研究发现,黑木耳多糖对癌细胞具有明显的抑制作用,并有增强人体的生理活性的医疗保健功能,因此备受世人的青睐。
燕麦是禾本科一年生草本植物,为谷类的一种。燕麦中含有丰富的营养素,如维生素、蛋白质、微量元素、纤维素以及维他命B群等。
人参对人体有“补五脏、安精神、定魂魄、止惊悸、明目开心益智”功效。人参总皂甙是从五加科植物人参的根、茎叶中提取精制而成,其富含十八种人参单体皂甙。主要适用于冠心病、心绞痛、心率过缓(过快)、室性早博、血压失调、神经衰弱、更年期综合症、疲劳过度、病后、产后、术后身体虚弱等症状;久服可以延年益寿,并有增强体力,治疗癌症患者因放疗和化疗引起的免疫功能低下等症;有抗冷热应激作用。同时具有增强人体表面细胞的活力,抑制衰老等作用。
蜂蜜作为一种医疗保健品治疗疾病,已有悠久的历史。明代医学家李时珍指出:“蜂蜜入药之功有五:清热也;补中也;润燥也;解毒也;止痛也。生则性凉,故能清热。熟则性温,故能补中。甘而和平,故能解毒。柔而濡泽,故能润燥。缓可以去急,故能止心腹肌肉创伤之痛。和可以致中,故能调和百药,而与甘草同功”。
营养分析表明,蜂蜜中含有大约35%葡萄糖,40%果糖,这两种糖都可以不经过消化作用而直接被人体所吸收利用。蜂蜜还含有与人体血清浓度相近的多种无机盐,还含有一定数量的维生素B1、B2、B6及铁、钙、铜、锰、磷、钾等。蜂蜜中含有淀粉酶、脂肪酶、转化酶等,是食物中含酶最多的一种。酶是帮助人体消化、吸收和一系列物质代谢及化学变化的促进物。蜂蜜的气味芳香可口,从营养和保健价值来看,不仅是滋补、益寿延年之品,又是治病之良药。
螺旋藻是一种生长在碱性盐湖的蓝绿藻。生产商业性螺旋藻,目前已遍及全球,干燥后的螺旋藻可添加于食品中。螺旋藻使用在人类食品添加物已经有二十年的历史,对于医疗也有许多临床报告。其中主要的功能有:降低血液中胆固醇含量、β-胡萝卜素可预防癌症及减缓病情、营造肠胃中健康的乳酸杆菌群、减轻汞及药物对于肾的毒性、γ-亚麻油酸(GLA)可刺激前列腺素作用、藻蓝蛋白可提高免疫系统、辐射的保护、提高铁的吸收及调理贫血症及减肥。特别是螺旋藻的液态萃取物能抑制HIV-1病毒来自人体T-细胞及外围血管单核细胞的复制,对于艾滋病人而言,无异是一个新的希望。
木耳人参素饮品的加工工艺如下:
(1)木耳用65~90℃纯净水浸泡1.5~3小时发透后,人工挑选去除杂质及劣质原料后进行脱水,以10~55℃变温用时20-60分钟进行低温干燥,使其含水率在8%以下,然后通过气流超细粉粉碎机碾制成18S~6S木耳粉,备用。
(2)燕麦通过水洗方式去除糟粕,并用纯净水进行清洗、浸润,采用机械熟化方式对燕麦进行85~485摄氏温度熟化,然后通过气流超细粉粉碎机碾制成18S~6S燕麦粉,备用。
(3)人参采用先水洗去污物,人工进行参锈清除,并通过纯净水二次冲洗后,以10~55℃变温进行低温干燥,然后通过气流超细粉粉碎机碾制成18S~6S人参粉,备用。
(4)螺旋藻超细粉质量标准为18S~6S,备用。
(5)蜂蜜及浓缩果汁,采购符合国标质量标准,用作添加成份。
将上述粉碎成精细粉的原料(按重量份数)木耳、人参、燕麦按比例混合后,再添加螺旋藻和蜂蜜,经干燥后配制为袋装粉状冲剂、饮片或胶囊;按不同口味可以添加不同果味的浓缩果汁制成饮品。
本发明的积极效果是其具有预防三高即高血压,高脂肪,高血脂的功效,还具有清胃肠、抗血栓、抗辐射、抗肿瘤和补脾益肺、生津安神、强身健体、润肤养颜、益寿延年的功效。
具体有以下几方面的效果:
(一)“人体的清道夫”
木耳人参素饮品中含有丰富的植物胶原成分,它具有较强的吸附作用,对无意食下的难以消化的头发、谷壳、木渣、沙子、金属屑等异物具有一定的溶解与氧化作用。常食用木耳人参素饮品能起到清理消化道、清胃涤肠的作用。特别是对从事矿石开采、冶金、水泥制造、理发、面粉加工、棉纺毛纺等空气污染严重工种的工人,能起到良好的保健作用。
(二)优质天然补血品
木耳人参素饮品中的黑木耳被营养学家誉为“素中之荤”和“素中之王”。每100克黑木耳中含铁185毫克,它比绿叶蔬菜中含铁量最高的菠菜高出20倍,比动物性食品中含铁量最高的猪肝还高出约7倍,是各种荤素食品中含铁量最多的。中医认为,黑木耳味甘性平,有凉血、止血作用,主治咯血、吐血、衄血、血痢、崩漏、痔疮出血、便秘带血等,是因其含铁量高,可以及时为人体补充足够的铁质。所以它是一种天然补血食品。
(三)减肥防癌治便秘
木耳人参素饮品中的黑木耳、人参、燕麦和蜂蜜含有丰富的纤维素和一种特殊的植物胶原,纤维中含有β-聚葡萄糖。所以可以改善消化功能、促进肠胃蠕动,还有消炎、促进创伤面愈合、增强消化系统功能及滋补的作用。纤维素和植物胶原这两种物质能够促进肠道脂肪食物的排泄、减少食物中脂肪的吸收,从而防止肥胖;同时,由于这两种物质能促进胃肠蠕动,防止便秘,有利于体内大便中有毒物质的及时清除和排出,从而起到预防直肠癌及其它消化系统癌症的作用。所以,常食木耳人参素饮品,对预防多种老年疾病、抗癌、防癌,延缓衰老都有良好的效果。
(四)化解结石
木耳人参素饮品中的黑木耳对胆结石、肾结石、膀胱结石等内源性异物有比较显著的化解功能。黑木耳所含的发酵和植物碱,具有促进消化道与泌尿道各种腺体分泌的特性,并协同这些分泌物催化结石,滑润管道,使结石排出。同时,黑木耳还含有多种矿物质,能对各种结石产生强烈的化学反应,剥脱、分化、侵蚀结石,使结石缩小,排出。如长期食用木耳人参素饮品,亦可使有些人的结石逐渐变小变碎,排出体外。
(五)降低血胆固醇
木耳人参素饮品中含有水溶性纤维以和β-聚葡萄糖,可以降低血中总胆固醇(Total Cholesterol)以及低密度脂蛋白胆固醇(坏的胆固醇;LDL-C)的量,以降低罹患心血管疾病的风险,并且可以增加胆酸的排泄。
(六)控制血糖
木耳人参素饮品中的水溶性纤维具有平缓饭后血糖上升的效果,所以有助于糖尿病患控制血糖。
(七)预防骨质疏松
木耳人参素饮品中的燕麦中含有锰。要预防骨质疏松,除了增加钙的摄取外,体内也不能缺乏锰。因为燕麦中含有锰,所以也可以间接的预防骨质疏松。
(八)润活细胞,抑制衰老
木耳人参素饮品中含有十八种人参单体皂甙,不仅适用于冠心病、心绞痛、心率过缓、过快、室性早博、血压失调、神经衰弱、更年期综合症、疲劳过度、病后、产后、术后身体虚弱等症状;久食还可以延年益寿,并能增强体力,治疗癌症患者因放疗和化疗引起的免疫功能低下等症;有抗冷热应激作用。维生素E,又称发育酚,有较强的抗氧化性,增强人体表面细胞的活力,抑制衰老,有一定的抗衰老作用。
木耳人参素饮品中的螺旋藻中含很高的γ-亚麻酸,有促进钙吸收、提高免疫力、防止代谢紊乱和防止衰老的功能。γ-亚麻酸是前列腺素的前体,在加氧酶的作用下变为前列腺素,前列腺素对生殖,心血管、呼吸、消化及神经系统均有作用。
(九)改善冠状血管的血液循环
木耳人参素饮品中的蜂蜜中含量高又易被人体吸收的葡萄糖,能营养心肌和改善心肌的代谢功能,能使心血管舒张和改善冠状血管的血液循环。蜂蜜由于能保证血流正常,因而对心力衰竭和心脏病有一定疗效。根据近代医学文献报道,蜂蜜对心脏病患者的益处,主要在于它能营养心肌和改善心肌代谢功能。它能扩张冠状动脉,所以也能治疗心绞痛。常服木耳人参素饮品的心脏病患者,体况可明显改善,促使血液的成分正常,血红蛋白含量增加,心血管收缩力加强。
(十一)美容养颜,嫩白肌肤
木耳人参素饮品中的蜂蜜中含有大约35%葡萄糖,40%果糖和人参皂甙,这两种糖和人参皂甙可以不经过消化作用而直接被人体所吸收利用。而且蜂蜜中含有与人体血清浓度相近的多种无机盐,还含有一定数量的维生素B1、B2、B6及铁、钙、铜、锰、磷、钾等。蜂蜜中含有淀粉酶、脂肪酶、转化酶等,是食物中含酶最多的一种。酶是帮助人体消化、吸收和一系列物质代谢及化学变化的促进物。蜂蜜的气味芳香可口,从营养和保健价值来看,不仅是滋补、益寿延年之品,又是治病之良药。同时具有美容养颜,嫩白肌肤作用。
(十二)抑制一些致癌物质的致癌作用
木耳人参素饮品中的螺旋藻、燕麦等含多种人体必需的微量元素,钙、镁、钠、钾、磷、碘、硒、铁、铜、锌等,缺铁会导致贫血,缺锌会导致发育不良;硒能激活DNA修复酶,刺激免疫球蛋白及抗体的产生,捕获自由基,降低或抵抗体内某些金属的毒性,抑制一些致癌物质的致癌作用。
(十三)多种维生素综合作用
由于木耳人参素饮品中含有多种维生素,其综合作用在木耳人参素饮品饮食中发挥着不可替代的治疗保健作用。维生素B2的主要功能是促进代谢,对于糖、脂和氨基酸都很重要。缺乏维生素B2会导致细胞代谢失调,引起眼角膜和口角血管增生,白内障、口角炎、角膜炎等。B6的功能是以辅酶的形式参与氨基酸和不饱和脂肪酸的代谢,长期缺乏会导致皮肤,中枢神经和造血机能的损害。维生素C缺乏症最显著的是坏血病,毛细血管出血,骨发育不全。维生素E可以扩张末梢血管,并改善血液循环,调整身体状况,所以能减轻使更年期障碍症状。
由于木耳人参素饮品中含有广泛的人体生理机能所必需的多种维生素、矿物质、植物胶原、蛋白质、及碳水化合物等微量元素,使得人们在日常食用中得到充分的补充,达到调理和改善生理机能的效果。是多元化、营养全面、吸收率高的天然有机既食又药的保健饮品。
具体实施方式:
下面结合实施例对本发明做进一步的描述:
实施例1:
(1)木耳用65℃纯净水浸泡1.5小时发透后,人工挑选去除杂质及劣质原料后进行脱水,以10--25--10℃变温用时60分钟进行低温干燥,使其含水率在8%以下,然后通过气流超细粉粉碎机碾制成受木耳粉,备用。
(2)燕麦通过水洗方式去除糟粕,并用纯净水进行清洗、浸润,采用机械熟化方式对燕麦进行85摄氏温度熟化,然后通过气流超细粉粉碎机碾制成18S燕麦粉,备用。
(3)人参采用先水洗去污物,人工进行参锈清除,并通过纯净水二次冲洗后,以10--25--10℃变温进行低温干燥,然后通过气流超细粉粉碎机碾制成18S人参粉,备用。
(4)螺旋藻超细粉质量标准为18S~6S,备用。
(5)蜂蜜及浓缩果汁,采购符合国标质量标准,用作添加成份。
将上述粉碎成精细粉的原料(按重量份数)木耳20、人参1、燕麦35按比例混合后,再添加螺旋藻5和蜂蜜10,经干燥后配制为袋装粉状冲剂。
实施例2:
(1)木耳用85℃纯净水浸泡2小时发透后,人工挑选去除杂质及劣质原料后进行脱水,以10—40--10℃变温用时40分钟进行低温干燥,使其含水率在8%以下,然后通过气流超细粉粉碎机碾制成9木耳粉,备用。
(2)燕麦通过水洗方式去除糟粕,并用纯净水进行清洗、浸润,采用机械熟化方式对燕麦进行200摄氏温度熟化,然后通过气流超细粉粉碎机碾制成9S燕麦粉,备用。
(3)人参采用先水洗去污物,人工进行参锈清除,并通过纯净水二次冲洗后,以10—40--10℃变温进行低温干燥,然后通过气流超细粉粉碎机碾制成9S人参粉,备用。
(4)螺旋藻超细粉质量标准为9S,备用。
(5)蜂蜜及浓缩果汁,采购符合国标质量标准,用作添加成份。
将上述粉碎成精细粉的原料(按重量份数)木耳30、人参2、燕麦40按比例混合后,再添加螺旋藻10和蜂蜜15,经干燥后配制为饮片。
实施例3:
(1)木耳用65~90℃纯净水浸泡3小时发透后,人工挑选去除杂质及劣质原料后进行脱水,以10—55--10℃变温用时20分钟进行低温干燥,使其含水率在8%以下,然后通过气流超细粉粉碎机碾制成6S木耳粉,备用。(2)燕麦通过水洗方式去除糟粕,并用纯净水进行清洗、浸润,采用机械熟化方式对燕麦进行485摄氏温度熟化,然后通过气流超细粉粉碎机碾制成6S燕麦粉,备用。
(3)人参采用先水洗去污物,人工进行参锈清除,并通过纯净水二次冲洗后,以10—55--10℃变温进行低温干燥,然后通过气流超细粉粉碎机碾制成6S人参粉,备用。
(4)螺旋藻超细粉质量标准为6S,备用。
(5)蜂蜜及浓缩果汁,采购符合国标质量标准,用作添加成份。
将上述粉碎成精细粉的原料(按重量份数)木耳35、人参2.5、燕麦45按比例混合后,再添加螺旋藻15和蜂蜜25,经干燥后配制,按不同口味可以添加不同果味的浓缩果汁制成饮品。
Claims (1)
1.一种木耳人参素饮品,其特征在于所述的木耳人参素饮品加工工艺如下:
(1)木耳用65~90℃纯净水浸泡1.5~3小时发透后,人工挑选去除杂质及劣质原料后进行脱水,以10~55℃变温用时20-60分钟进行低温干燥,使其含水率在8%以下,然后通过气流超细粉粉碎机碾制成200-80目木耳粉,备用;
(2)燕麦通过水洗方式去除糟粕,并用纯净水进行清洗、浸润,采用机械熟化方式对燕麦进行85~485摄氏温度熟化,然后通过气流超细粉粉碎机碾制成200-80目燕麦粉,备用;
(3)人参采用先水洗去污物,人工进行参锈清除,并通过纯净水二次冲洗后,以10~55℃变温进行低温干燥,然后通过气流超细粉粉碎机碾制成200-80目人参粉,备用;
(4)螺旋藻超细粉质量标准为200-80目,备用;
(5)蜂蜜及浓缩果汁,采购符合国标质量标准,用作添加成份;将上述粉碎成精细粉的原料木耳20~35、人参1~2.5、燕麦35~45按重量份混合后,添加螺旋藻5-15和蜂蜜10~25,按不同口味再添加不同果味的浓缩果汁制成饮品,或经干燥后配制为袋装粉状冲剂、饮片或胶囊。
