PATENTANSPRÜCHE
1. Vorrichtung zur Zubereitung von Speisen unter der Einwirkung von Wärme, mit einer Wärmequelle und einem Wärmeübertrager, der einerseits der Wärmequelle ausgesetzt ist und anderseits die zuzubereitenden Spreisen trägt, gekennzeichnet durch mindestens einen im Wirkungsbereich der Wärmequelle angeordneten, geneigten Wärmeübertrager (9), welcher an seiner der Wärmequelle (7) abgewandten Seite mit Halteorganen (10) für die Speisen versehen ist und an seinem unteren Endabschnitt eine Rinne (12) zum Garkochen bzw.
Erhitzen mindestens teilweise flüssiger Speiseportionen aufweist.
2. Vorrichtung nach Anspruch 1, dadurch gekennzeichnet, dass der Wärmeübertrager in Form eines metallischen, mit einander beabstandeten Haken (10) versehenen, kegelförmigen oder kegelstumpfförmigen Hutes (9) ausgebildet ist, an dessen' Unterseite sich eine ringförmige Rinne (12) anschliesst.
3. Vorrichtung nach Anspruch 2, dadurch gekennzeichnet, dass sich unterhalb des Hutes (9) ein Holzkohlenträger (7) befindet und der Hut (9) mit der genannten Rinne (12) über dem Holzkohlenträger (7) lose auf mehreren Stützen (2) ruht, so dass dank der Kaminwirkung (P) des Hutes (9) Luft zwischen den Stützen von unten angesaugt wird, den Holzkohlenträger passiert und durch das Innere des Hutes nach oben entweicht.
4. Vorrichtung nach Anspruch 3, dadurch gekennzeichnet, dass die Stützen (2) auf einer Holzplatte (1) befestigt sind und zwischen Holzplatte (1) und Holzkohlenträger (7) ein Hitzeschild (6) angeordnet ist.
5. Vorrichtung nach Anspruch 1, dadurch gekennzeichnet, dass die Wärmequelle ein Gasbrenner oder eine unterhalb des Hutes bzw. an dessen Innenfläche angeordnete elektrische Heizspirale ist.
6. Vorrichtung nach einem der Ansprüche 2 bis 5, dadurch gekennzeichnet, dass die Haken (10) von der Innenseite des Hutmantels (10a) her so aus demselben herausgedrückt sind, dass die Haken (10) mit ihrem Oberteil am Hutmantel (10a) hängen und die unterhalb jedes Hakens entstandene Öffnung (11) allseitig von einer Erhöhung umgeben ist.
7. Vorrichtung nach einem der Ansprüche 2 bis 5, dadurch gekennzeichnet, dass der Hut (9) aus geschwärztem Eisenblech besteht und an seinem Oberteil Löcher (14) zum Abzug der heissen Gase besitzt.
8. Vorrichtung nach einem der Ansprüche 4 bis 7, dadurch gekennzeichnet, dass drei jeweils um etwa 1200 gegeneinander versetzte Stützen (2) auf der Holzplatte (1) befestigt sind und jede Stütze (2) drei übereinander angeordnete Abstützorgane aufweist, deren unteres (4) den Hitzeschild (6), deren mittleres (5) den Holzkohlenträger (7) und deren oberes den genannten Hut (9) stützt.
Es ist bekannt und heute auch allgemein üblich, dass Nahrungsmittel - insbesondere Fleisch - auf dem Holzkohlengrill zubereitet werden. Bei Verwendung der auf dem Markt erhältlichen Grillapparate muss jedoch der doppelte Nachteil in Kauf genommen werden, dass einerseits der beim Grillieren aus dem Fleisch austretende Saft nach unten in die glühende Holzkohle tropft und damit verlorengeht, während anderseits kaum eine Möglichkeit besteht, den Grillvorgang auf den Esstisch und damit in den Erlebnisbereich derjenigen Personen zu verlegen, für welche die Nahrungsmittel bestimmt sind.
Es ist somit die Aufgabe der vorliegenden Erfindung, eine Vorrichtung zur Zubereitung von Speisen, insbesondere Fleisch, unter Wärmeeinwirkung zu schaffen, welche den am Fleisch anfallenden Saft verwertet, ferner auch das Garkochen von Gemüse, das Erhitzen von Bouillon usw. gestattet und ausserdem auf dem Esstisch unter den Augen der auf das Essen wartenden Personen gefahrlos verwendbar ist.
Diese Aufgabe wird erfindungsgemäss gelöst durch die im unabhängigen Anspruch definierte Merkmalskombination.
Im Restaurant erhält der Gast somit nicht mehr die fertige Speise vorgesetzt, sondern erlebt den Grillier- und Kochvorgang selbst mit und kann den Ablauf desselben durch Verkürzen oder Verlängern der Grillierdauer, Wahl der Gewürze und Gemüsezusätze usw. persönlich beeinflussen. Dieser Miteinbezug des Gastes in das Kocherlebnis oder - von der anderen Seite her gesehen - die Verlagerung des Grilliervorganges in den Erlebnisbereich des Gastes, hebt nicht nur den Appetit, sondern schafft eine stimmungsvolle Atmosphäre, die keineswegs mehr mit der üblichen Wartehaltung des Gastes verglichen werden kann. Damit steht der Gast den zubereiteten Speisen, zu deren Zustandekommen er ja selbst beitrug, von vornherein bejahend und weniger kritisch gegenüber.
Nachstehend wird ein Ausführungsbeispiel der erfindungsgemässen Vorrichtung anhand der beiliegenden Zeichnung beschrieben.
Fig. 1 ist eine vereinfachte Perspektivdarstellung des Ausführungsbeispiels, und
Fig. 2 ist ein Vertikalschnitt der gleichen Vorrichtung.
Auf einer massiven Holzplatte 1 sind drei jeweils um 1200 versetzte Stützen 2 angeordnet. Jede dieser Stützen 2 besteht aus einem im wesentlichen U-förmig gebogenen Stahlprofil, dessen einer Schenkel 2a nach oben verlängert und so umgebogen ist, dass er eine Stützklaue 3 bildet. An dem anderen Schenkel 2b jeder Stütze 2 sind zwei Winkeleisen 4 und 5 vertikal übereinander befestigt. Diese Winkeleisen stellen ebenfalls Stützorgane dar, und so stützt sich auf die unteren Winkeleisen 4 ein metallischer Hitzeschild 6, welcher die Holzplatte 1 und gegebenenfalls das darunter befindliche Tischtuch vor der Einwirkung der Wärmequelle schützen soll; auf dem Winkeleisen 5 ruht ein Holzkohlenträger 7, der als kreisrunde Schale ausgebildet und zur Aufnahme glühender Holzkohle bestimmt ist.
Die oberen Endabschnitte der Stützschenkel 2b sind der Neigung der Seitenwand des Holzkohlenträgers 7 angepasst und halten diesen sicher in der gewünschten Lage.
Die drei Stützen 2 sind mittels Schrauben 8 auf der Holzplatte 1 befestigt.
Ein in seiner Gesamtheit mit 9 bezeichneter, aus geschwärztem Stahlblech bestehender Hut ist mit seinem unteren Abschnitt lose auf die drei Stützklauen 3 aufgesetzt. Dieser in Form eines Kegelstumpfes ausgebildete Hut 9 dient als Wärmeübertrager, d. h. er hat die Hauptaufgabe, die von der glühenden Holzkohle entwickelte Wärme auf die zu erhitzenden Nahrungsmittel zu übertragen. Zu diesem Zwecke ist der Hut 9 einerseits so angeordnet, dass er direkt oberhalb des Holzkohlenträgers 7 sitzt; ferner sind in dem kegelstumpfförmigen Mantel 9a des Hutes Haken 10 vorgesehen, an welchen Fleischstückchen usw. angehängt werden können. Die Haken 10 sind vorzugsweise von innen her aus dem Material des Hutmantels 9a herausgestanzt, so dass sich jeweils unterhalb jedes Hakens 10 eine entsprechende Stanzöffnung 11 ergibt.
Die Haken 10 werden dabei so aus dem Material des Mantels 9a herausgedrückt, dass sie einerseits mit ihrem oberen Abschnitt mit dem Mantel selbst noch verbunden bleiben, während die Löcher 11 allseitig von einem leicht erhöhten Rand umgeben sind. Auf diese Weise wird mit Sicherheit vermieden, dass der auf der Aussenfläche des Mantels 9a herunterfliessende Fleischsaft durch die Löcher 11 ins Innere des Hutes und damit in Kontakt mit der Wärmequelle gelangt.
Wie ferner die beiden Fig. 1 und 2 deutlich zeigen, ist der kegelstumpfförmige Mantel 9a des Hutes 9 an seinem unteren Rand zu einer Rinne 12 umgebogen. Diese Rinne 12, deren äussere Kontur derjenigen der Stützklauen 3 angepasst ist, dient zur Aufnahme von Bouillon oder einer sonstigen Flüssig
kein, die sich während des Zubereitungsvorganges mit dem am
Hut herunterlaufenden Fleischsaft mischt und ferner zum Garkochen von Gemüse usw. dienen kann.
An einem Griff 13 kann der Hut nach Belieben abgehoben bzw. auf die Stützen 2 aufgesetzt werden.
Wird die beschriebene Vorrichtung in einem Restaurant verwendet, so stellt man dem Gast vorzugsweise eine Platte mit verschiedenen Fleischsorten zur Verfügung, die bereits die richtige Grösse aufweisen, um an den Haken 10 aufgehängt zu werden. Gleichzeitig erhält der Gast verschiedene Saucen,
Gewürze, rohes Gemüse sowie die zum Garkochen des letzte ren erforderliche Bouillon, welche beispielsweise gleich in die
Rinne 12 eingefüllt sein kann. Die Vorrichtung wird dem Gast zusammen mit der auf dem Holzkohlenträger 7 befindlichen glühenden Holzkohle auf den Tisch gestellt und nun kann der
Gast den Zubereitungsvorgang der Speisen von sich aus be stimmen. Die an den Haken 10 des Hutes 9 aufgehängten
Fleischstücke werden langsam grilliert, wobei sie von den eventuell von der Wärmequelle aufsteigenden Rauchgasen praktisch geschützt sind.
Der sich aus dem erhitzten Fleisch entwickelnde Saft und das herablaufende Fett werden in der
Rinne 12 gesammelt, wo das Gemüse in der vom Gast ge wünschten Zusammensetzung kocht.
Die glühende Holzkohle wird bei einer bevorzugten Aus führungsform nicht lose auf dem Holzkohlenträger 7 aufge bracht sondern bereits vor dem Entzünden in einem geschlossenen Drahtgeflecht verpackt. Der Hut 9 bildet in bezug auf die Wärmequelle einen Kamin, so dass innerhalb des Kamins eine Luftströmung (Pfeile P) entsteht. Die Luft tritt im Zwischenraum zwischen den Stützen 2 von unten in den Hut 9 ein und verlässt denselben im Bereich der oberen Stirnfläche, wo mehrere Löcher 14 (Fig. 2) angebracht sind.
Die Holzkohle dürfte wohl die beliebteste Wärmequelle für die beschriebene Vorrichtung darstellen. Grundsätzlich wäre es aber auch möglich, innerhalb der Vorrichtung einen Gasbrenner anzubringen oder auch ein elektrisches Heizgerät zu verwenden. Die elektrische Heizspule könnte entweder unterhalb des Hutes 9 oder direkt auf der Innenfläche desselben angeordnet sein.
Die beschriebene Vorrichtung kann vom Fachmann im Rahmen des im unabhängigen Patentanspruch vorgesehenen Schutzbereiches in mannigfaltiger Hinsicht abgewandelt werden. So wäre es selbstverständlich möglich, den Wärmeübertrager nicht in der dargestellten Kegelstumpfform, sondern beispielsweise in der Form einer geneigten Fläche, einer Halbkugel usw. auszubilden. Wesentlich ist dabei, dass die zur Aufnahme der Fleischstücke dienende Fläche einerseits geneigt ist und anderseits ohne Unterbrechung an ihrem unteren Abschnitt in eine Rinne zur Aufnahme des herablaufenden Saftes mündet.

PATENT CLAIMS

On a solid wooden plate 1, three supports 2, each offset by 1200, are arranged. Each of these supports 2 consists of an essentially U-shaped steel profile, one leg 2a of which is extended upwards and bent over in such a way that it forms a support claw 3. On the other leg 2b of each support 2, two angle irons 4 and 5 are attached vertically one above the other. These angle irons also represent support elements, and so is supported on the lower angle irons 4 a metallic heat shield 6, which is intended to protect the wooden plate 1 and, if appropriate, the tablecloth underneath from the action of the heat source; on the angle iron 5 rests a charcoal support 7, which is designed as a circular shell and is intended to receive glowing charcoal.
The upper end portions of the support legs 2b are adapted to the inclination of the side wall of the charcoal support 7 and hold it securely in the desired position.
The three supports 2 are fastened to the wooden plate 1 by means of screws 8.
A hat made of blackened steel sheet, designated in its entirety by 9, is loosely placed on the three support claws 3 with its lower section. This hat 9 in the form of a truncated cone serves as a heat exchanger, i. H. Its main task is to transfer the heat generated by the glowing charcoal to the food to be heated. For this purpose, the hat 9 is arranged on the one hand so that it sits directly above the charcoal carrier 7; furthermore, hooks 10 are provided in the truncated cone-shaped jacket 9a of the hat, to which pieces of meat etc. can be attached. The hooks 10 are pressed out of the material of the jacket 9a in such a way that, on the one hand, their upper section remains connected to the jacket itself, while the holes 11 are surrounded on all sides by a slightly raised edge. In this way it is avoided with certainty that the meat juice flowing down on the outer surface of the jacket 9a comes through the holes 11 into the interior of the hat and thus comes into contact with the heat source.

Charcoal is probably the most popular heat source for the device described. In principle, however, it would also be possible to install a gas burner within the device or to use an electric heater. The electric heating coil could either be arranged below the hat 9 or directly on the inner surface thereof.
The device described can be modified in many ways by a person skilled in the art within the scope of protection provided for in the independent patent claim. It would of course be possible, of course, not to design the heat exchanger in the truncated cone shape shown, but, for example, in the form of an inclined surface, a hemisphere, etc. It is essential here that the surface serving to receive the pieces of meat is on the one hand inclined and on the other hand, without interruption, opens at its lower section into a channel for receiving the juice flowing down.
