Verfahren zum Separieren von Eiweiss und Eigelb
Die Erfindung betrifft ein Verfahren zum Separieren von Eiweiss und Eigelb sowie einem Separator zur Durchführung des Verfahrens.
Das notwendige Separieren von Eiweiss und Eigelb für die Zubereitung verschiedener Speisen erfolgt nach dem meistverbreiteten Verfahren dadurch, dass mit der einen halbierten Eischale das Eigelb zurückgehalten wird, während das Eiweiss in ein Gefäss ausläuft. Bei einer exakten Separation ist es dabei notwendig, das Eigelb mehrmals von der einen Schalenhälfte in die andere Schalenhälfte umzuschütten.
Dieses Verfahren ist zeitraubend und bedingt eine gewisse Handfertigkeit.
Ein weiteres Verfahren besteht darin, dass mit einer Gabel oder mit einem zweckmässigen Sieb das Eigelb aus dem Eiweiss des aufgeschlagenen Eies ausgehoben wird.
Auch dieses Verfahren stellt einige Anforderungen an die Handfertigkeit.
Dem erfindungsgemässen Verfahren liegt die Aufgabe zugrunde, die Separierung von Eiweiss und Eigelb rasch, mühelos und hygienisch einwandfrei vorzunehmen.
Erfindungsgemäss wird dies erreicht, dass Eiweiss und Eigelb eines aufgeschlagenen Eies in ein Separatorgefäss gegeben wird, dass man das Eiweiss durch die Mantellöcher des Gefässes in ein Sammelgefäss abfliessen lässt, und dann durch Öffnen einer, eine Ausflussöffnung des Gefässes verschliessenden Klappe, das Eigelb in ein zweites Sammelgefäss abfliessen lässt.
Das Verfahren nach der Erfindung wird zweckmässig mit dem erfindungsgemässen Separator ausgeführt, bei dem das Separatorgefäss in seinem Mantel Löcher aufweist, am unteren, eine Abflussöffnung begrenzenden Rand des Mantels ein Abflussrohr anschliesst und eine die Abschluss öffnung abschliessende Klappe angeordnet ist, und das Abflussrohr mit einem Sammelkragen mit Ausgussteil umgeben ist. Die Klappe kann mit einem Hebel verbunden sein. Der Hebel seinerseits kann mit einem Gegengewicht verbunden sein.
Eine weitere Möglichkeit, die Klappe in geschlossener Normallage zu halten, besteht darin, sie mit einer Rückzugsfeder zu verbinden.
Vorzugsweise sind die Sammelgefässe in einem Rahmen gelagert, der mit der Eiaufschlagvorrichtung verbunden sein kann. An der Eiaufschlagvorrichtung kann durch ein Verbindungsmittel das Separatorgefäss mit seinen verbundenen Teilen abgestützt sein.
Im folgenden wird anhand der Zeichnung ein Ausführungsbeispiel des erfindungsgemässen Verfahrens beschrieben und im Zusammenhang damit auch der er findungsgemässe Separator beschrieben.
Die einzige Figur zeigt den Separator in perspektivischer Darstellung.
Die Eischale wird an der Kante 1 der Eiaufschlagvorrichtung 2 geknackt. Die Eiaufschiagvorrichtung 2 ist mit dem Rahmen 3 fest verbunden. Der Inhalt des Eies wird in das Separatorgefäss 4 eingelassen. Das Ei weiss fliesst nun durch die Löcher 5 im Mantel 6 auf den Sammelkragen 7 und durch dessen Ausgussteil 8 in das Sammelgefäss 9. Infolge seiner höheren Viskosität kann das Eigelb nicht durch die Löcher 5 abfliessen. Es wird durch den Rohrrand 10 des Abflussrohres 11, der sich etwa zwei Millimeter über der Klappe 12 befindet, im Zentrum des Abflussgefässes 4 gehalten.
Nach dem Abfluss des Eiweisses wird der Hebel 13 gedreht, so dass die mit ihm verbundene Klappe 12 in das Abflussrohr klappt. Durch die nun entstandene Öffnung fliesst das Eigelb in das Abflussrohr 11 und durch die Öffnung 14 in das Sammelgefäss 15. Das Gegengewicht 16 bringt die Klappe wieder in die Ruhelage. Die Sammelgefässe 9 und 15 sind in dem Rahmen 3 gelagert.
Durch ein, an der Eiaufschlagvorrichtung 2 gelagertes Verbindungsmittel 17 ist das Separatorgefäss 4 mit seinen verbundenen Teilen über den Sammelgefässen 9 und 15 abgestützt.
Durch das Separieren von Eiweiss und Eigelb nach dem beschriebenen Verfahren ist dem Verbraucher mit dem Separator ein Mittel in die Hand gegeben, die Se parierung rasch, mühelos und hygienisch einwandfrei vorzunehmen.
