Nochfrequenzdielektrikumheizeinheit Die Erfindung betrifft eine Hochfrequenzdielek- trikumheizeinheit, bei welcher das zu erhitzende Pro dukt zwischen einem Elektrodenpaar angeordnet ist, an welches ein elektrisches Hochfrequenzpotential angelegt ist.
Die erfindungsgemässe Einheit ist dadurch ge kennzeichnet, dass die Einheit mindestens zwei serie- geschaltete Elektrodenpaare umfasst.
Bei einer Ausführungsform können die Elektro den verschieden gross sein, so dass dann die Potential differenzen zwischen den Elektroden der verschie denen Paare verschieden gross sind.
Das zu erhitzende Produkt oder eine Folge von Produkten kann nacheinander zwischen die verschie denen Elektrodenpaare gebracht werden.
Die vorliegende Heizeinheit kann zum Backen oder zum Teilbacken von Brot oder anderen Mehl produkten verwendet werden. Sie kann z. B. als die Hochfrequenzmittel des in der Patentschrift Nr. 352296 beschriebenen Ofens verwendet werden und kann zusätzlich als mindestens einen Teil der anderen z. B. als Krustenbildner angewendeten Heiz- mittel verwendet werden.
Es können z. B. drei Elektrodenpaare vorhanden sein, deren Grösse den Änderungen der physikalischen (d. h. elektrischen) Eigenschaften der Produkte wäh rend ihres Erhitzens angepasst werden. Zum Beispiel kann beim Backen von Brot das erste Elektroden paar verhältnismässig klein sein, damit eine beträcht liche Potentialdifferenz und ein grosser Energieeingang in den Teig erhalten wird. Das zweite Elektrodenpaar kann wesentlich grösser sein, wodurch eine kleinere Potentialdifferenz und ein kleinerer Energieeingang erhalten wird, und das dritte Elektrodenpaar kann wieder ziemlich klein sein, um einen hohen Energie eingang z.
B. zur Krustenbildung zu erhalten. Die Produkte können von Fördermitteln von einem Elek- trodenpaar zum nächsten bewegt werden, und es können zwischen den Paaren Zwischenräume vor handen sein, so dass kurze Zeitintervalle zwischen auf einanderfolgenden Heizstufen entstehen und die Pro dukte nicht gleichzeitig der Einwirkung von zwei Elek- trodenpaaren ausgesetzt sind. Anderseits können Pro dukte in aufeinanderfolgenden Backschritten gleich zeitig zwischen mehreren Paaren sein.
Die physikalischen Eigenschaften der Produkte, welche bei der Bestimmung der Elektrodengrösse berücksichtigt werden müssen, sind die Dielektrizitäts- @konstante, der spezifische Widerstand und die spezi fische Wärme. Beim Teig ändern diese mit dem Wassergehalt im Verlauf des Backens und mit anderen Faktoren. Das zu erreichende Ziel besteht in der maximalen Ausnützung der verfügbaren Energie, ohne dass Verbrennen oder Funkenentladungen zwischen den Elektroden und den Produkten auftreten.
Weiterhin können Mittel vorgesehen sein, um die physikalischen Konstanten des Produktes oder min mindestens die seiner äusseren Partien beim Erhitzen zu ändern oder zu beeinflussen. Zum Beispiel kann Wasser durch eine oder mehrere Düsen oder Injekto- ren auf die Brotoberfläche gespritzt werden, wodurch die Dielektrizitätskonstante und die spezifische Wärme örtlich erhöht und der spezifische Widerstand ver kleinert wird. Zum Beispiel kann die spezifische Wärme der äusseren Brotschicht von etwa 0,5 auf 0,8 erhöht werden.
Ein solches Besprühen kann in einem späteren Stadium des Backens ver wendet werden, um die Krustenbildung zu begünsti gen, indem z. B. die Temperatur der Brotoberfläche auf eine Tiefe von z. B. 2-10 mm auf 130-140 an steigen gelassen wird, im Gegensatz zu etwa 95 des Brotinnern. Der Abstand der Elektroden eines oder mehrerer Paare und/oder die Grösse dieser Elektroden kann ver stellbar sein.
In der Zeichnung ist der Erfindungsgegenstand beispielsweise dargestellt. Es zeigen: Fig. 1 einen Längsschnitt eines Ofens, Fig.2 eine teilweise Draufsicht des Ofens und ein Temperatur-Zeit-Diagramm, Fig. 3 einen Querschnitt eines Teiges, welcher Schichten verschiedener Feuchtigkeit nach dem Be sprühen aufweist, Fig.4 eine perspektivische Ansicht einer Elek trode und Fig. 5 eine teilweise Draufsicht eines Förder bandes.
Gemäss Fig. 1 ist ein Backraum 1 während des Betriebes mit Dampf angefüllt und wird von einem Förderband 2 durchquert, welches zu backende Stücke 3 befördert. Diese Stücke 3 werden zuerst Wärmequellen 4 ausgesetzt, deren Höhe über dem Band verstellbar ist. Wenn die Innentemperatur der Stücke 3 400C erreicht, werden sie von einem Wasserfilm bedeckt, welcher von durch Sprühdüsen 5 austretendem Druckwasser von 80-85 Wärme erzeugt wird. Daraufhin gelangen die Stücke 3 unter eine Elektrode 6. Bei dieser Elektrode 6 wird der grösste Teil der Totalspannung absorbiert, und die Innentemperatur steigt auf 90-95 , wobei die Tem peratur der äussersten Schichten etwa 1300 erreicht.
Der vom Wasser erzeugte Dampf beginnt im Zwi schenraum zwischen den Elektroden 6 und 7 zu verdampfen, wobei die Temperatur im Ofen 280-2900 beträgt. Unter der Elektrode 7 verdampft das Wasser weiterhin und die absorbierte Spannung nimmt ab. Das Innere der Stücke beginnt, trocken zu werden und die äusseren Schichten werden fest und karamelisie- ren etwas. Die Stücke 3 werden vom Band 2 weiter unter eine Elektrode 8 gebracht, bei welcher die De hydrierung und die Karamelisation beendet wird; daraufhin gelangen die Stücke 3 zwischen zwei Rei hen von Strahlungshitzeelementen 9, wo die Verfär bung der Kruste beendet wird.
Die Elemente 9 sind wie die Elemente 4 bewegbar, wobei ihr Abstand vom Band 2 in Abhängigkeit der Dicke der Stücke 3 ge regelt werden kann. Elektroden 13 der Kondensatoren sind an einem Hochfrequenzstromgenerator 11 an geschlossen und dienen auch als Träger für das För derband 2. Die Elektroden 6, 7 und 8 sind von zwei Rohren 10 getragen, welche von den Elektroden isoliert sind. Die Elektrodenpaare 6/13, 7/13, 8/l3 sind in Reihe geschaltet.
In Fig. 2 ist besonders die Konstruktion des Kon- densators gut sichtbar. Im Diagramm ist auf der Abszisse die Zeit und auf der Ordinate die Tempera tur aufgetragen.
Jede der Elektroden 6, 7 und 8 enthält Gleit- bleche 6', 7' und 8', welche das genaue Anpassen des Kondensators erlauben. Es ist auch möglich, die eine oder die andere Elektrode auf den Rohren 10 zu verschieben, um sie mittels Blöcken 12 an die Sprüh- düsen 5 anzunähern oder sie davon zu entfernen. Die Sprühdüsen sind so gerichtet, dass die Strahlen nicht mit der Elektrode 6 in Berührung kommen und den Bahnen<I>B, B'</I> folgen, wobei die Mittellinien der Strahlen 30-45 zu der Bewegungsrichtung des Bandes 2 gedreht sind.
Im Diagramm sind zwei Kurven dargestellt: der elektrische Widerstand R und die Dielektrizitäts- konstante K. Die in der Richtung des Pfeiles A be wegten Stücke 3 sind während einer bestimmten Zeit der Wärme ausgesetzt, welche vom unter der Elek trode 6 herrschenden Feld erzeugt wird, und zwar in Abhängigkeit der Variationen von K und R. Der freie Raum zwischen den Elektroden 7 und 8 erleich tert die Positionierung der einen oder der anderen. Unter der Elekrode 8 dehydrieren die Stücke und die Spannung 8-13 wird sehr klein.
Beim vorliegenden Ofen ist die automatische Ein stellung der Spannung und der Frequenz möglich, wodurch sich die Verwendung einer reduzierten Span nung erübrigt und keine komplizierten Reguliermittel verwendet werden müssen. Zum gleichen Zweck können parallelgeschaltete Hilfskondensatoren ver wendet werden, um eine möglichst kleine Variation der Totalkapazität zu erhalten. Massnahmen können auch getroffen werden (für statische Behandlung), um mehrere übereinanderliegende seriegeschaltete Arbeitskondensatoren zu bilden.
Der erste wird wäh rend einer bestimmten Zeit und in einem bestimmten Verhältnis zum Wert der Kapazität des ersten Elek- trodenpaares geladen, dann ein wenig später der zweite; dabei wird der bei dem mit der Folgemethode arbeitende Ofen vorhandene Zwischenraum in diesem Fall durch ein entsprechendes neutrales Zeitintervall ersetzt.
Gemäss Fig. 3 ist das Innere 14 eines besprühten Teiges eine homogene Masse, deren spezifische Wärme z. B. 0,5 beträgt und welche Masse die Krume wird. Die äussere Schicht 15 stellt eine Deckschicht von der gleichen Natur wie die vorgehende dar; ist aber sehr 'feucht, und ihre spezifische Wärme beträgt z. B. 0,85, was die Krustenbildung ermöglicht. Die Doppel linie 16 stellt den Grad der von den Heizelementen 9 erzeugten Bräunung dar.
In Fig. 4 sind die verstellbaren Gleitbleche 6' mittels Schrauben 17 an der Elektrode 6 befestigt. Gemäss Fig. 5 besteht das Förderband 2 aus einem Drahtgeflecht des Kettentyps, welches flachgewalzt ist. Diese Konstruktion verringert erwiesenermassen die Funkenbildung oder Erhitzung an den Kontakt punkten zwischen den Gliedern. Das Band hat eine Maschenweite von 6 mm. Ein anderes Band hatte eine Maschenweite von 4 mm.
High-frequency dielectric heating unit The invention relates to a high-frequency dielectric heating unit, in which the product to be heated is arranged between a pair of electrodes to which an electrical high-frequency potential is applied.
The unit according to the invention is characterized in that the unit comprises at least two pairs of electrodes connected in series.
In one embodiment, the electrodes can be of different sizes, so that the potential differences between the electrodes of the different pairs are then of different sizes.
The product to be heated or a series of products can be brought between the various pairs of electrodes one after the other.
The present heating unit can be used for baking or partial baking of bread or other flour products. You can z. B. can be used as the high frequency means of the furnace described in Patent Specification No. 352296 and can additionally be used as at least part of the other e.g. B. can be used as a crust former heating agent.
It can e.g. For example, there may be three pairs of electrodes, the size of which is adapted to changes in the physical (i.e. electrical) properties of the products as they are heated. For example, when baking bread, the first pair of electrodes can be relatively small, so that a considerable potential difference and a large energy input into the dough is obtained. The second pair of electrodes can be much larger, whereby a smaller potential difference and a smaller energy input is obtained, and the third pair of electrodes can again be quite small to provide a high energy input z.
B. to get crust formation. The products can be moved from one electrode pair to the next by conveyors, and there can be gaps between the pairs, so that short time intervals arise between successive heating stages and the products are not exposed to the action of two electrode pairs at the same time . On the other hand, products in successive baking steps can be between several pairs at the same time.
The physical properties of the products which must be taken into account when determining the electrode size are the dielectric constant, the specific resistance and the specific heat. In the case of dough, these change with the water content in the course of baking and with other factors. The goal to be achieved is the maximum utilization of the available energy without burning or spark discharges occurring between the electrodes and the products.
Furthermore, means can be provided in order to change or influence the physical constants of the product or at least those of its outer parts during heating. For example, water can be sprayed onto the bread surface through one or more nozzles or injectors, as a result of which the dielectric constant and the specific heat are locally increased and the specific resistance is reduced. For example, the specific heat of the outer bread layer can be increased from about 0.5 to 0.8.
Such spraying can be used ver at a later stage of baking to favor the crust formation by z. B. the temperature of the bread surface to a depth of z. B. 2-10 mm is allowed to rise to 130-140, in contrast to about 95 of the bread inside. The distance between the electrodes of one or more pairs and / or the size of these electrodes can be adjustable.

According to FIG. 1, a baking chamber 1 is filled with steam during operation and is traversed by a conveyor belt 2, which conveys pieces 3 to be baked. These pieces 3 are first exposed to heat sources 4, the height of which is adjustable above the belt. When the internal temperature of the pieces 3 reaches 400C, they are covered by a film of water which is generated by pressurized water of 80-85 heat exiting through spray nozzles 5. The pieces 3 then come under an electrode 6. With this electrode 6, most of the total voltage is absorbed and the internal temperature rises to 90-95, with the temperature of the outermost layers reaching around 1300.
The steam generated by the water begins to evaporate in the inter mediate space between the electrodes 6 and 7, the temperature in the oven being 280-2900. Under the electrode 7 the water continues to evaporate and the absorbed voltage decreases. The inside of the pieces starts to get dry and the outer layers solidify and caramelize a little. The pieces 3 are brought from the belt 2 further under an electrode 8, in which the De hydrogenation and the caramelization is ended; then get the pieces 3 between two Rei hen of radiant heat elements 9, where the discoloration of the crust is stopped.
The elements 9 are movable like the elements 4, their distance from the belt 2 depending on the thickness of the pieces 3 ge can be regulated. Electrodes 13 of the capacitors are connected to a high frequency generator 11 and also serve as a carrier for the conveyor belt 2. The electrodes 6, 7 and 8 are carried by two tubes 10 which are insulated from the electrodes. The electrode pairs 6/13, 7/13, 8/13 are connected in series.
The construction of the capacitor is particularly clearly visible in FIG. In the diagram, the time is plotted on the abscissa and the temperature on the ordinate.
Each of the electrodes 6, 7 and 8 contains sliding plates 6 ', 7' and 8 'which allow the capacitor to be precisely adjusted. It is also possible to move one or the other electrode on the tubes 10 in order to bring them closer to the spray nozzles 5 by means of blocks 12 or to remove them therefrom. The spray nozzles are directed so that the jets do not come into contact with the electrode 6 and follow the paths <I> B, B '</I>, with the center lines of the jets 30-45 being rotated to the direction of movement of the belt 2.
Two curves are shown in the diagram: the electrical resistance R and the dielectric constant K. The pieces 3 moved in the direction of the arrow A are exposed to the heat generated by the field under the electrode 6 for a certain time, depending on the variations of K and R. The free space between the electrodes 7 and 8 facilitates the positioning of one or the other. Under the electrode 8 the pieces dehydrate and the voltage 8-13 becomes very small.
In the present furnace, the voltage and frequency can be set automatically, which means that the use of a reduced voltage is unnecessary and no complicated regulating means have to be used. For the same purpose, auxiliary capacitors connected in parallel can be used in order to obtain the smallest possible variation in the total capacitance. Measures can also be taken (for static treatment) in order to form several working capacitors, one above the other, connected in series.
The first is charged for a certain time and in a certain ratio to the value of the capacitance of the first pair of electrodes, then the second a little later; in this case, the space present in the furnace working with the subsequent method is replaced in this case by a corresponding neutral time interval.
According to FIG. 3, the interior 14 of a sprayed dough is a homogeneous mass whose specific heat z. B. 0.5 and what mass the crumb will be. The outer layer 15 is a cover layer of the same nature as the previous one; but is very 'humid, and its specific heat is z. B. 0.85, which enables crust formation. The double line 16 represents the degree of browning produced by the heating elements 9.
In FIG. 4, the adjustable sliding plates 6 ′ are fastened to the electrode 6 by means of screws 17. According to FIG. 5, the conveyor belt 2 consists of a wire mesh of the chain type which is rolled flat. This design has been shown to reduce sparking or heating at the points of contact between the links. The tape has a mesh size of 6 mm. Another tape had a mesh size of 4 mm.
