Abstract

[Also in Division H5] Dough pieces 3 are moved on a wire mesh conveyer belt (Fig. 5, not shown) through a baking enclosure 1, which is filled with steam, past radiant heat sources 4 and 9 and between pairs of high frequency electrodes 6, 7, 8, upon the lower plates of which the conveyer is supported. The baking schedule is adjustable by vertical adjustment of radiant heaters 4 and 9, by adjustment of the area of electrodes 6, 7, 8 (see Division H5), and by spraying the dough pieces with hot water from nozzles 5 (Fig. 2, not shown) to affect their dielectric and thermal properties.
