Abstract
L'invention concerne un procédé permettant de séparer les protéines et les graisses dans un mélange d'uf. Le procédé comprend une étape de microfiltration du mélange d'uf, la microfiltration consistant à pomper à travers un filtre un mélange d'uf contenant du jaune d'uf et des blancs d'uf (albumen). L'invention concerne également une poudre d'uf obtenue à partir d'uf et une poudre d'uf à solidité de gel élevée.
