Abstract

Confiserie glacée constituée d'une masse de confiserie glacée contenant du lait et d'un élément discontinu de glace à l'eau. La glace à l'eau est sensiblement non collante et sa composition, sous forme de solution de glace à l'eau, a une rhéométrie supérieure à 1,0. La confiserie glacée comporte un élément glace à l'eau à l'italienne. Elle est fabriquée par un procédé selon lequel (i) on met en contact une masse de confiserie glacée contenant du lait avec une solution de glace à l'eau ayant une rhéométrie supérieure à 1,0 environ, de façon que ladite solution, en collant sur la masse de confiserie glacée contenant du lait, se présente au moins partiellement sous forme de glace à l'eau; et (ii) on refroidit rapidement la solution de glace à l'eau collée jusqu'à -15 ·C ou au-dessous.
