Abstract

L'invention a trait à une technique d'isomérisation du saccharose en isomaltulose à l'aide de micro-organismes générateurs d'isomaltulose viables et immobilisés. Les cellules des micro-organismes sont immobilisées sur un véhicule comportant une substance granulaire d'échange d'anions. L'isomaltulose résultante peut être employée à la production d'isomalt à des fins d'édulcoration.
