Abstract
MÉTODO PARA MODIFICAR UMA PROTEÍNA, ALIMENTO, PREPARAÇÃO DE ENZIMA PARA MODIFICAR UMA PROEÍNA, E, MÉTODO PARA ESTABELECER UMA RELAÇÃO ÓTIMA DE PROTEÍNA GLUTAMINASE PARA TRANSGLUTAMINASE. São providos: um método de desnaturar uma proteína por tratamento com tanto as proteínas glutaminase como transglutaminase; um alimento contendo uma proteína tendo sido desnaturada com estas enzimas; uma preparação de enzima para desnaturar uma proteína que compreende estas enzimas; e um método para estabelecer a relação quantitativa ótima de proteína glutaminase à transglutaminase todas as duas sendo adicionadas a uma proteína. Uma proteína é desnaturada por adição de proteína glutaminase e a transglutaminase à proteína substancialmente ao mesmo tempo, ou adição da proteína glutaminase à proteína antes que a transglutaminase atue sobre a proteína, ou controlando a relação quantitativa da proteína glutaminase à transglutaminase, pelo que uma proteína é tratada, em um nível definitivo. A relação quantitativa ótima de proteína glutaminase para transglutaminase, todas as duas sendo adicionadas a uma proteína, é determinada com base na intensidade do sinal de RMN da proteína rotulada com amônio rotulado por um isótopo ou semelhante.
