Abstract

PROCESSO PARA A FABRICAçãO DE INGREDIENTES ALIMENTìCIOS, PROCESSO PARA A FABRICAçãO DE UM PRODUTO ALIMENTìCIO PARA HUMANOS, PRODUTOS ALIMENTìCIOS E MISTURA DE óLEO. A presente invenção refere-se a uma barra nutricional ou outro alimento que incorpora pró-oxidantes e/ ou ácidos graxos poliinsaturados ou suas fontes em forma encapsulada, em especial as microcápsulas. Os pró oxidantes podem ser sais metálicos tais como sais de cobre, manganês, ferro e/ ou zinco. As fontes de ácido graxo ómega 3 incluem o óleo de peixe. Os processos para a preparação das cápsulas de ácido graxo poliinsaturado também são descritas. As cápsulas/ microcápsulas de ácido graxo poliinsaturado são preparadas pela formação de uma emulsão de ácido graxo insaturado com um veículo, secagem por pulverização da emulsão para formar um pó e encapsular o pó, especialmente com um leito fluido. A presente invenção é especialmente útil para encapsular os ácidos graxos poliinsaturados ou suas fontes de óleo, de maior preferência, ácidos graxos ómega 3 e ómega 6, tais como ácido araquidónico, ácido docosaexaenóico (DHA), ácido eicosapentaenóico (EPA), ácido lineoléico, ácido linolênico (ácido <244>-Iinolênico) e ácidos y- linolênico, óleo de peixe e fontes de óleo de ácido graxo C18:2 e C18:3 tais como óleo de canola, óleo de soja e suas misturas.
