"PROCESSO PARA PRODUZIR TRANSGLUTAMINASE TENDOATIVIDADE ENZIMáTICA, E, PROTEìNA".Transglutaminasetendo atividade enzimática é produzido ao submetertransglutaminase desnaturada a etapas contendo pelo menos asseguintes etapas (a) e (b): (a) uma etapa de formação de umaestrutura intermediária em construção estrutural para o estadotendo a atividade enzimática em que a enzima desnaturada édeixada reagir em um meio aquoso sob uma condição ácida, e (b)uma etapa para formar uma estrutura de ordem superior em que aenzima tendo a estrutura intermediária na construção estruturalacaba tendo a atividade enzimática em um meio aquoso sob umaregião de pH neutro. A transglutaminase desnaturada produzidacom um microorganismo recombinante pode ser reduplicada emboa eficiência e transglutaminase de alta pureza tendosubstancialmente a mesma atividade enzimática que atransglutaminase nativa, ou seja atividade de transglutaminase,pode ser produzida industrialmente. Um produto intermediário tendoa estrutura intermediária na construção estrutural é tambémprovido.
