Abstract

Patente de Invenção:<B>"PROTEASE CP70 ATIVA NO FRIO"<D>. Apresenta-se aqui uma protease psicrofílica que tem as seguintes propriedades físico-químicas: (a) atividade específica e especificidade de substrato: a protease age sobre caseína, gelatina, hemoglobina e albumina, decompondo-as especificamente na ordem caseína, gelatina, hemoglobina e albumina; (b) pH ótimo:8,0 (c) estabilidade em pH: a protease é estável na faixa de pH 6,5 a pH 10,0 a 30°C durante 1 hora; (d) temperatura ótima: cerca de 40°C; (e) estabilidade à temperatura: em pH 7 durante 1 hora, a protease quase não é inativada a uma temperatura de até 30°C. mas é inativada a 40°C em até 40%, e completamente inativada a 50°C em cerca de 10 minutos; (f) atividade enzimática: a protease tem cerca de 50% ou mais de sua atividade máxima a 20°C; (g) o centro de atividade da enzima é a serina; e (h) o peso molecular da protease é de cerca de 70 kDa, conforme medido por SDS-PAGE.
