hard stock ou gordura estruturante, método para a preparação de uma emulsão, margarina ou gordura de margarina, pasta, composição de triacilglicerídio, seu método de produção e seus usos. a invenção se refere a um método para prover uma gordura estruturante pela interesterificação de uma primeira gordura com um alto teor de ácidos graxos saturados de cadeia longa com uma segunda gordura ou óleo para prover composições de triglicerídio tendo um maior nível de ácidos graxos do tipo h, especialmente c18:0 na posição 2, as composições de triglicerídio assim obtidas e pastas feitas a partir destas. a presente invenção se situa no campo de química dos alimentos.
