Abstract

método para produzir um alimento fermentado contendo bifidobactéria. uma matéria prima de leite é fermentada usando-se lactococcus lactis que não possui proteinase envelopada na parede celular e uma bactéris de bifidobacterium. a lactococcus lactis é, por exemplo, uma lactcoccus lactis tendo uma propriedae que, quando esta bactéria de bifidobacterium são inoculadas em um meio que contém 1% (p/p) de glicose e 10% (p/p) de leite em pó com gordura reduzida em quantidades de 5,0x 106 a 2,0 x 108 cfu e 1,0 x 107 a 3,0 x 109 cfu por 1 ml do meio, respectivamente, e cultivada, e o meio é rapidamente resfriado até 10ºc da temperatura de cultura quando o ph do meio se torna de 4,6a 5,5, e armazenadas a 10ºc por 2 semanas, a taxa de sobrevivência da bactéria de bifidobacterium é mantida para ser de 30% ou mais.
