Abstract

Composição aquosa para tratar um item de carne, método para sanitizar um item de carne, e, kit para sanitizar um item de carne. Métodos e composições para tratar itens para controlar microorganismos são fornecidos. O método trata da produção por contato da superfície de um item com uma solução aquosa compreendendo i) um perácido orgânico da fórmula rc (o) ooh em que r é metila, etila, n-propila, ou s-propila; ii) um ácido 2-hidróxi orgânico selecionado de ácido tartárico, ácido cítrico, ácido málico, ácido mandélico, e ácido lático; e iii) água em que a solução aquosa tem um ph de 2,5 a 6,0.
