Abstract

"PRODUTO DE PROTEìNA DE SOJA COM BAIXO TEOR DE ISOFLAVONAS, ALTO TEOR DE SAPONINAS E PROCESSO PARA A PRODUçãO DO MESMO". Um material de proteína de soja tendo um teor de isoflavonas muito baixo e um alto teor de saponinas é produzido por um processo que envolve a remoção, por adsorção, das isoflavonas de um material de proteína de soja obtido por remoção da fibra da farinha fina ou dos flocos de soja. Material de proteína de soja também tem um alto índice de Solubilidade de Nitrogênio ('NSI'). Material de proteína de soja com baixo teor de isoflavonas, alto teor de saponinas tem pelo menos cerca de 55,0% em peso de proteína, menos do que cerca de 200 <109>g/g de isoflavonas de matéria seca total e pelo menos cerca de 1000 <109>g/g de sapogenóis de soja de matéria seca total. O processo para produzir o material de proteína de soja com baixo teor de isoflavonas, alto teor de saponinas envolve remover a fibra de um material de soja desengordurado e obter um licor que é subseq³entemente pasteurizado.
