Abstract
"MéTODO DE FABRICAçãO DE CARNE BOVINA MOìDA COZIDA E EMBALADA A VáCUO EM BOLSA DO TIPO POUCHE". Segundo o qual, o produto obtido, qual seja, carne moída cozida não necessita ser armazenada em ambientes refrigerados e pode ser consumida de pronto, após cozimento em forno de microondas do produto ainda embalado na embalagem pouche; o método de fabricação consiste das seguintes etapas; A) Recebimento da carne in-natura; B) Recebimento de Insumos; C) Câmara-pulmão; D) Primeira Moagem; E) Tratamento de água; F) Cozimento prévio; G) Segunda moagem; H) Misturador; I) Embalagem primária; J) Esterilização; K) Resfriamento / Incubação; L) Recebimento de embalagem (plástico/ papelão); N) Sala de embalagem primária; M) Sala de embalagem secundária/ armazenagem.
