Abstract

"ISOLADO DE PROTEìNA DE SEMENTE DE óLEO DE LINHAçA E PROCESSO DE PREPARAçãO DO MESMO". Trata-se de isolados de proteína de semente de óleo de linhaça e linola. Estes isolados são feitos ao se extrair a proteína de semente de óleo de linhaça e de linola a partir da farinha proveniente do óleo, concentrado a solução protéica aquosa, diluindo a solução de proteína concentrada até formar micelas protéicas, recolhendo as micelas protéicas e secando a massa micelar protéica. O isolado de proteína de linhaça adicional pode ser recuperado a partir do supernadante proveniente da formação micelar protéica. O isolado de proteína possui um teor protéico de pelo menos cerca de 90% em peso (N x 6,25), de preferência pelo menos cerca de 100% em peso, em uma base ponderal seca.
