Abstract
"PRODUçãO DE ISOLADO DE PROTEìNA DE SEMENTE OLEAGINOSA". Isolados de proteína de semente oleaginosa, particularmente isolado de proteína de canola, são produzidos em um alto nível de pureza de pelo menos cerca de 100% em peso (N x 6,25) por um processo onde a proteína de semente oleaginosa é extraída de refeição de semente oleaginosa, a solução de proteína aquosa resultante é concentrada a um conteúdo de proteína de pelo menos 200 g/L, e a solução de proteína concentrada é adicionada a água fria possuindo uma temperatura abaixo de cerca de 15<198>C para formar micelas de proteína, que são sedimentadas para fornecer uma massa micelar de proteína (PMM) .
