Abstract
"MéTODO E APARELHAGEM PARA O CONDICIONAMENTO SUPERFICIAL DE EMBUTIDOS ALIMENTìCIOS". que consiste em um método e uma aparelhagem para o condicionamento de superfície de embutidos alimentícios, em particular embutidos à base de carne, na forma de salsichas, ling³iças e similares, o qual compreende as seguintes principais fases: introduzir um embutido alimentício num canal de condicionamento para a estabilização superficial do mesmo; numa primeira seção do citado canal, banhar a superfície do embutido alimentício com um agente estabilizador sob a forma de gel; e numa segunda seção do citado canal, banhar a superfície do embutido alimentício com um agente catalisador do citado agente estabilizador.
