"AGENTE GELEIFICANTE REVERSìVEL, USO DO MESMO, GEL, PRODUTO ALIMENTìCIO, E, PROCESSOS PARA A FORMAçãO DE UM GEL E PARA ROMPER UM GEL". A invenção está relacionada a um agente geleificante para a produção de um gel reversível. O agente geleificante é um amido degradado de raiz ou tubérculo que compreende pelo menos 95% em peso de amilopectina, com base na substância seca do amido. O agente geleificante de acordo com a invenção é particularmente adequado para uso em produtos alimentícios.
