Abstract

"CORANTE ANTOCIâNICO OBTIDO DE MATéRIA VEGETAL E PROCESSO DE PRODUçãO DO MESMO". Corante antociânico obtído de matéria prima vegetal e processo de produção relacionado a indústria de alimentos, cosméticos, farinacêutica e têxtil e pode ser usado na produção de bebidas alcoólicas e não alcoólicas, confeitos, produtos a base de leite feanentado, coloração de cápsulas de tabletes, corante de roupas intimas infantis, brinquedos, etc. O dito corante natural compreendendo, glicosideos cianidina, glicosideos peonidina, substância orgânica e sais minerais e glicosídeo pelargonidina com a seguinte razão entre os componentes, expressa em massa, %: glicosídeo cianidica 0,1 - 8,6; glicosídeo peonidina 0,08 - 6,45; glicosideo pelargonidina 0,005 - 4,3; substâncias orgânicas e sais minerais - o restante. Adicionalmente, a razão de glicosídeo pelargonidina: glicosídeo peonidina: glicosideo cianidina de 1: 1,5:2, fomece um corante com propriedades físicas valiosas, como, manutenção da cor quando o pH do ambiente é menor que 7, terrno-estável, foto-estável e manutenção de suas propriedades por 2 anos, além de sua densidade ótica relativa ser maior quando submetido a luz com comprimento de onda de 505 - 515 DM. O processo de produção do corante da invenção implica na polpa vegetal de milho previamente seca contendo antocianina ser moída, extraída com uma mistura de soluções aquosas de ácidos clorídrico e cítrico num campo de vibração ultra-sónica. Então a matéria colorante extraída é filtrada e concentrada a vácuo. A matéria prima é adicionalmente preparada por extração pela infusão da matéria moída em agente extrator por 6-8 horas a temperatura de 35-40<198>C. A extração pode ser realizada em três etapas.
