Abstract
Сладоледът може да се приготвя при домашни условия и промишлено в предприятията на хранително-вкусовата промишленост или в заведенията за обществено хранене. Той е балансиран по отношение съдържанието на белтъчини, витамини, минерални соли и други, а съдържанието на мазнини е сведено до минимум. Съставът на диетичния сладолед е на млечна основа, по-специално натурално българско кисело мляко, а като емулгатор стабилизатор в рецептурите е включен хидролизат от грудки на салеп (Tuber Orchis mascula L.) или медицинска ружа (Radix Althaea officinalis L.). Добавката от облепихово масло или маслен екстракт от Hippophae rhamnoides L. и хидролизат отдрога на бял имел (Viscum album L.) подобрява баланса на витамини и микро- и макроелементи и определя лечебно-профилактичното им действие. По желаниекъм състава може да се включи плодова, зеленчуковаили плодово-зеленчукова маса като пълнеж.
