Abstract

On met une liqueur d'alimentation contenant du glucose en contact avec une glucose-isomérase stabilisée chimiquement à une température d'environ 90 à 140 degres C et un pH d'environ 3 à 8 avec une durée de contact réelle suffisante pour parvenir à une teneur en fructose de 53 à 60 % en poids par rapport aux hydrates de carbone totaux en maintenant la durée de dégradation à un niveau égal ou inférieur à celui calculé par la formule td = a log (4300/T+273)-pH-3,23) dans laquelle T = température de réaction en degrés C; pH est le pH du mélange de réaction et td est la durée de dégradation en minutes.
