La présente invention est relative aux aiguise-couteaux qui comportent une ou plusieurs paires de disques en acier trempé, disposés en quinconce de manière à laisser entre leurs bords convergents une fente en V.
Lorsqu'on passe dans cette fente la lame du couteau en lui imprimant par traction un mouvement longitudinal, le taillant des disques enlève au tranchant de la lame de fins copeaux, à la manière d'un outil de coupe. Toutefois, la forme des disques des aiguise-couteaux connus de ce genrene permet pas de donner à leur taillant, comme à celui d'un outil de coupe, un angle de dépouille favorisant l'évacuation des copeaux. Ceux-ci sont en quelque sorte arrachés, laissant au tranchant du couteau un morfil prononcé.
D'autre part, l'angle d'incidence du taillant des disques connus étant invariable, l'aiguisage n'est pas amélioré si on l'opère avec force, ce qui ne fait qu'accentuer le morfil.
L'invention a pour objet un aiguise-couteaux établi de façon que ses disques présentent un angle de dépouille qui a pour effet d'éviter dans une grande mesure la production de morfil, et un angle d'incidence variable permettant d'obtenir un aiguisage plus ou moins prononcé selon la force avec laquelle on l'opère.
Ces deux avantages sont obtenus, suivant l'invention, en donnant aux disques de l'aiguise-couteaux la forme d'une cuvette ou d'une assiette dont le bord relevé procure l'angle de dépouille désiré et possède avantageusement une faible épaisseur de manière à fléchir sous l'action de la lame en cours d'aiguisage, sa flexion, variable avec la for.c.e d'aiguisage, faisant varier l'angle d'incidence d'une façon correspondante.
Le dessin annexé représente à titre d'exemple une forme d'exécution de l'invention. Fig. 1 est une vue de côté de l'aiguise-couteaux, Fig. 2 en est une vue n plan, et Fig. 3 une coupe longitudinale. @ Fig. 4 montre à plus grande échelle, en coupe horizontale, les jeux de disques de l'aiguise-couteaux, et

L'aiguise-couteaux représenté comporte deux jeux de disques 1, 2 en acier trempé qui sont enfilés librement, avec interca- lation de rondelles d'espacement 3, 4, sur deux axes parallèles 5, 6 rives dans la tête 7 d'un manche 8, la disposition des disques et axes étant telle que les deux jeux de disques s'interpénètrent en formant une fente 9 en V, dans laquelle on passe la lame du couteau à aiguiser.
Conformément à l'invention, les disques 1,2 sont em- boutis en forme de cuvette ou d'assiette, et leur bord relevé la ou 2a est flexible, soit parce que le disque entier est fait en acier très mince, d'une epaisseur de l'ordre de 0,5 mm. par exemple, soit parce que le bord au disque est aminci de façon correspondante, tandis que les rondelles d'espacement ont un diamètre moindre que les disques afin de dégager ces bords flexibles.
La tranche des disques peut être purement cylindrique comme c'est représenté en traits mixtes du cote gauche de la Fig.5, de sorte qu'au repos l'angle d'incidence a est nul. L'angle de dépouille b résulte de la concavité des disques.
Lorsqu'on tire la lame de couteau 10 dans la fente 9 entre les jeux de disques 1, 2, le frottement rebrousse le bord flexible des disques en créant l'angle d'incidence a dont la valeur augmente avec la force de frottement, procurant ainsi un aiguisage d'autant plus mordant que la lame est tirée avec plus de force entre les disques. Grâce à l'angle de dépouille b, les copeaux d'acier 11 enlevés du tranchant de la lame 10 sont évacues sans laisser de morfil.'
Il peut être avantageux de laisser un certain jeu entre les disques et les rondelles intercalaires pour permettre aux disques de s'incliner légèrement les uns vers les autres de façon à créer l'angle d'incidence dès avant que les bords des disques aient eu l'occacion de fléenir, si la traction exercée sur la lame et/ou la flexibilite des disques sont faibles.
Bien entendu, le nombre des disques constituant l'aiguise-couteaux peut être superieur ou inférieur à celui représenté et d'autres modifications peuvent être apportées à la forme d'exécution donnée à titre d'exemple, sans qu'on s'écarte de l'invention.

1.- Aiguise-couteaux à disques d'acier, caractérisé en ce que les disques sont en forme de cuvette ou d'assiette.

The present invention relates to knife sharpeners which comprise one or more pairs of hardened steel discs, staggered so as to leave a V-shaped slot between their converging edges.
When the blade of the knife is passed through this slot, giving it a longitudinal movement by traction, the cutting of the discs removes fine chips from the edge of the blade, like a cutting tool. However, the shape of the discs of the known knife sharpeners of this type does not make it possible to give their cutting edge, like that of a cutting tool, a relief angle favoring the evacuation of chips. These are somehow torn off, leaving a pronounced burr on the edge of the knife.
On the other hand, the angle of incidence of the cutting edge of known discs being invariable, the sharpening is not improved if it is operated with force, which only accentuates the edge.
The invention relates to a knife sharpener established so that its discs have a relief angle which has the effect of largely avoiding the production of burrs, and a variable angle of incidence making it possible to obtain sharpening. more or less pronounced according to the force with which it is operated.
These two advantages are obtained, according to the invention, by giving the discs of the sharpener the shape of a bowl or of a plate, the raised edge of which provides the desired relief angle and advantageously has a small thickness of so as to flex under the action of the blade during sharpening, its flexion, variable with the sharpening force, varying the angle of incidence in a corresponding manner.

The knife sharpener shown has two sets of hardened steel discs 1, 2 which are threaded freely, with interposed spacers 3, 4, on two parallel axes 5, 6 edges in the head 7 of a handle 8, the arrangement of the discs and axes being such that the two sets of discs interpenetrate forming a V-shaped slot 9, through which the blade of the sharpening knife is passed.
According to the invention, the discs 1, 2 are stamped in the shape of a bowl or plate, and their raised edge 1a or 2a is flexible, either because the entire disc is made of very thin steel, of thickness of the order of 0.5 mm. for example, either because the edge to the disc is correspondingly thinned, while the spacers have a smaller diameter than the discs in order to free these flexible edges.
The edge of the discs can be purely cylindrical as is shown in phantom on the left side of Fig.5, so that at rest the angle of incidence a is zero. The clearance angle b results from the concavity of the discs.
When pulling the knife blade 10 into the slot 9 between the sets of discs 1, 2, the friction reverses the flexible edge of the discs creating the angle of incidence a, the value of which increases with the frictional force, providing thus sharpening all the more biting as the blade is pulled with more force between the discs. Thanks to the clearance angle b, the steel shavings 11 removed from the cutting edge of the blade 10 are discharged without leaving any burrs.
It may be advantageous to leave some play between the discs and the spacers to allow the discs to tilt slightly towards each other so as to create the angle of incidence as soon as the edges of the discs have reached the edge. Of course, the number of discs constituting the sharpener may be greater or less than that shown and other modifications may be made to the embodiment given by way of example, without deviating from invention.
