Hohlnadeln allein gelingt es aber nicht, die Lake im Fleischinnern auch vollkommen gleichmässig und in reichlicher Menge zu verteilen, da sie besonders die höher gelegenen Eintrittsöffnungen der Hohl- nadeln nicht mit genügendem Druck erreicht.
Um diesen Übelstand zu beseitigen, sind gemäss der Erfindung durch die Wandung eines zur Auf- nahme der Fleischstucke dienenden Vakuumbehälters Röhren oder Schläuche geführt, die mit dem einen Ende an die Hohlnadel und mit dem ändern Ende an einen Lakebehälter angeschlossen sind.
Dadurch ist es möglich, beim Vakuumpökeln die Lake ohne Druckverlust in die Hohlnadel einzupressen und so eine vollkommene Durchpokelung der Fleischstiicke zu erreichen.
Der Erindungsgegenstand ist auf der Zeichnung in einem senkrechten Schnitt durch die Pökelvorrichtung schematisch veranschaulicht. a bezeichnet einen luftdicht verschliessbaren Behälter zur Aufnahme von Fleischstücken, beispielsweise eines Schinkens b. In die Fleischstücke b sind gelochte Hohlnadeln c getrieben, welche an Schläuche d angeschlossen sind. Letztere munden zweckmässig in einen gemeinsamen Verteiler e, der durch eine den Fleischbehälter a durchsetzende Leitung f mit einem Lakebehälter g verbunden ist.
An der Stelle h kann die Luft aus dem Fleischbehälter a abgesaugt werden, während der Lakebehälter g durch ein Ventil i mit der Aussenluft in Verbindung steht und mittels eines in der Leitung t liegenden Hahnes k in Betrieb genommen werden kann. Der Behälter g ist schliesslich noch durch eine besondere Leitung m mit dem Fleischbehälter a verbunden, um gegebenenfalls die Lake unmittelbar in den Behälter a eintreten zu lassen.
Das Pökeln kann sieh nun in folgender We ; se abspielen : Man saugt zunächst die Luft aus dem Behälter a und damit aus dem Innern der FleischstÜcke b, indem man bei geschlossenem Hahn k der Leitung f an der Stelle h eine Vakuumpumpe anschliesst. Dann öffnet man den Hahn k, worauf die Lake durch die Leitung l'zum Verteiler e und schliesslich durch die Schläuche d in die Nadeln c gelangt, von wo aus sie sieh im Innern der FleischstÜcke nach allen Richtungen gleichmässig und in reichlicher Menge verteilt.
Die Lake gelangt während des Pökelns mit einem Überdruck in die Nadeln, welcher dem Unterschied der in beiden Behältern a, g herrschenden Drücke entspricht. Auf die im Behälter g befindliche Lake wirkt der atmosphärische Druck. Es ist aber auch möglich, bei i einen Luftverdichter od. dgl. anzuschliessen, um die Lake mit einem höheren Druck in das Innere der FleischstÜcke zu treiben. Man kann auch während der Lakezufuhr durch die Hohlnadeln die bei h angeschlossene Vakuumpumpe in Betrieb halten oder gegebenenfalls durch die Leitung'm Lake unmittelbar in den Fleischbehälter e eintreten lassen.
