Abstract

La presente se refiere a un método para procesar un producto alimenticio recubierto, así como a productos alimenticios recubiertos obtenibles mediante dichos métodos. El método es particularmente adecuado para procesar productos alimenticios recubiertos por extrusión, como las salchichas. Reivindicación 1: Un procedimiento para procesar un producto alimenticio recubierto que comprende una composición de relleno y un material de recubrimiento, comprendiendo dicho procedimiento: poner en contacto el producto alimenticio recubierto con una solución de refuerzo que comprende iones metálicos del Grupo 2; y transferir el producto alimenticio recubierto a un licor de cocción, en el que el licor de cocción tiene una concentración más baja de iones metálicos del Grupo 2 que la solución de refuerzo.
