Abstract

Un método para la preparación de concentrado de cerveza, que comprende las etapas de: a) someter cerveza o sidra (1) a una primera etapa de concentración que comprende ósmosis inversa y/o nanofiltración y/o ultrafiltración para obtener un retenido (2) y un permeado que comprende alcohol y componentes de sabor volátiles (3), en donde el retenido (2) se caracteriza porque la concentración de compuestos no filtrables es igual o mayor que 5% (peso/peso), preferiblemente 10% (peso/peso), más preferiblemente 15% (peso/peso), tal como se calcula midiendo la densidad corregida por la cantidad de alcohol; b) someter el retenido (2) a una etapa de concentración de retenido que comprende ósmosis forzada para obtener un retenido concentrado (2) y un permeado que comprende alcohol y componentes de sabor volátiles.
