Abstract

Formulación de una mezcla especialmente desarrollada para obtener chocolate blanco sin leche (sin las proteínas de la leche y sin lactosa), sin azúcar, sin soja y con o sin fibras en su composición, con agradable y similar sabor al chocolate blanco convencional y manteniendo el sabor dulce del azúcar y de la leche. La formulación en cuestión se ajusta a las necesidades de personas con intolerancia a la lactosa y alérgicas a la proteína de la leche y de la soja, que no pueden consumir azúcar ni gluten y también, de personas que no desean consumir chocolate que contenga en su composición ni azúcar, leche, soja ni gluten. La formulación tiene la ventaja de proporcionar un producto sin los alergénicos de la soja y de la proteína de la leche, manteniendo las características de no dejar un sabor amargo en la boca, proporcionando una dulzura muy similar al chocolate blanco convencional y de poder ser consumido por diabéticos, celíacos, naturistas y otros consumidores especiales.
