Abstract
Emulsión que comprende un almidón ceroso. El sistema de emulsión resulta útil, en algunas formas de realización, para su incorporación dentro de fórmulas infantiles que comprende fuentes equivalente de proteínas, tales como las fórmulas diseñadas para individuos con ciertas alergias a las proteínas. De esta manera, en ciertas formas de realización, la presente se refiere a una composición nutricional que comprende una fuente equivalente de proteína que comprende una proteína hidrolizada, aminoácidos, o una mezcla de los mismos, una fuente de grasa, una fuente de carbohidrato, y un sistema emulsificante que comprende un almidón ceroso. El sistema emulsificante puede además incluir ésteres de ácido cítrico de mono- y di-glicéridos o un almidón modificado con ácido octenil succínico, o ambos.
