Abstract

La presente se refiere a una fuente de grasa para composiciones nutricionales, que comprende una fracción lipídica enriquecida que comprende glóbulos de grasa estructurados. La fracción lipídica enriquecida provee glóbulos de grasa que posee un tamaño deseado y composición ácido grasa y puede ser estabilizada por medio de componentes tales como fosfolípidos, colesterol, proteína de la membrana del glóbulo de grasa láctea y combinaciones de los mismos. Adicionalmente, la divulgación se refiere a métodos para apoyar la digestión de lípidos en un sujeto pediátrico al proveer una composición nutricional que comprende una fracción lipídica enriquecida que posee glóbulos de grasa estructurados que son más accesibles a las lipasas. La composición química, tamaño y estructura de los glóbulos de grasa puede mejorar la digestión. Las composiciones nutricionales divulgadas pueden proveer efectos beneficiosos para la salud sinérgicos y/o adicionales.
