Abstract

Métodos y composiciones que se relacionan con enzimas desaturasas que modulan la cantidad y ubicacion de enlaces dobles en ácidos grasos poliinsaturados de cadena larga (AGPI-CL). En particular métodos y composiciones para mejorar los perfiles de ácidos grasos omega-3 en productos y partes de plantas utilizando enzimas desaturasas exogenas y ácidos nucleicos que codifican dichas enzimas. En realizaciones particulares, las enzimas desaturasas exogenas utilizadas son delta 5 desaturasas de Hemiselmis spp..También se proporcionan composiciones de aceite de soja mejoradas que tienen EPA derivado de plantas que portan los genes de interés.
