Abstract
Se refiere a la utilizacion de goma de acacia, en especial, acacia senegal, para la preparacion de un producto fermentado estable, a base de leche o a base de soja, y dicha goma se utiliza en una concentracion de 3 a 10% en peso, con respecto al peso total del producto fermentado que contiene la goma de acacia y que se agrega después de la fermentacion de dicho producto.
