Abstract
Un proceso para la produccion de un producto alimenticio en el cual se incorpora un pigmento a una forma intermedia de dicho producto alimenticio y dicho proceso implica el agregado de al menos una enzima que es efectiva en convertir directamente dicho pigmento en una forma que resulta en un aumento de la blancura de al menos una parte del producto alimenticio comparado con el producto alimenticio al cual no se agrega dicha enzima durante su produccion. El presente también se relaciona con los productos alimenticios obtenidos durante el proceso del presente.
