Abstract
Se describe una composicion de sabor en la forma de una emulsion homogénea que comprende un sabor encapsulado en una matriz vítrea de carbohidrato compuesta de una composicion que comprende una mezcla de polidextrosa y lactitol. También se describe el procedimiento para preparar dicha composicion de sabor. La mezcla de polidextrosa y lactitol elimina la necesidad de agregar agua u otro plastificante en la operacion de extrusion mejorando las propiedades de encapsulacion de la técnica.
