Abstract

La presente se refiere a un producto de proteína de suero derivado de suero dulce mediante intercambio de aniones, que presenta estabilidad de los ácidosfrente al calor y/o reduccion de glucomacropéptidos (GMP), y métodos para obtener tal producto. T al método consiste en tomar un flujo de suero dulce,acidificar tal flujo a un pH que se encuentre sustancialmente entre 4 y 6, someter el flujo acidificado a intercambio anionico y recolectar el flujo deproteína no enlazada. El producto preferido tie ne una absorbancia a 610nm menor que 0,100 Au/cm o igual a la misma, luego de calentarse a 60-80 degree C, pH 3,6-3,8durante 20 minutos, con una concentracion de proteína de 4,8-5%. El producto preferido tiene asimismo contenido de GMP menor que el contenid o del flujo desuero de partida, y preferiblemente, no será mayor que el 15% del contenido total de proteína. Más preferiblemente, el contenido de GMP no podrá ser mayor queel 3% del contenido total de proteína. El producto puede ser aplicado particul armente como suplemento proteico en bebidas de bajo pH.
