Abstract
Método para producir un cultivo de cereal transformado mediante la introduccion de un gen quimérico que comprende un fragmento de ácido nucleicoque codifica un gen estructural de una enzima sintetasa de almidon no GBSSI o un fragmento del mismo. Comoconsecuencia de ésto, la estructura finadel almidon derivado del grano del cultivo transformado de cereal tiene un cambio en las proporciones relativas de amilosa a amilopectina y uncambio en el grado de polimerizacion del componente amilosa en comparacion con el almidon derivado del cultivo sin transformar. Alteraciones específicasen la estructura del almidon, tales como cambios en la relacion amilosa/amilopectina, cambios en la estructura fina de la amilopectina, abundancia aumentada decadenas muy cortas de amilopectina (dp 6-9), y cambios en el grado de polimerizacion de la amilosa, pueden ser creados controlando la expresion de sintetasasde almidon no GBSSI en plantas transgénicas. También se describen variedades de cultivos de cerealpreparadas por transformacion usando el método mencionadoasí como el almidon aislado del grano de una variedad de cultivo de cereal preparada usando dicho método, harinas preparadas con los granos de dichasvariedades de cultivos de cereal y un métodopara preparar un alimento engrosado.
