Abstract
Dicho procedimiento comprende los pasos de: (a) agregar una cantidad efectiva de (i) por lo menos un ácido leudante de liberacion lenta y (ii) por lo menosun ácido leudante activado por calor, a ingredientes secos o a una masa formada por la mezclad e un líquido con dichos ingredientes secos, donde dicho ácidoleudante de liberacion lente y dicho ácido leudante activador por calor se agregan en cualquier orden, juntos o separados y (b) agregar una cantidad efectivade un factor de carbonato enlas postrimerías del proceso de mezclado de la masa para preparar dicha masa leudada químicamente. Asimismo, se describen la masay el producto de panadería leudadas químicamente que se obtienen mediante dicho proceso así como la mezcla seca multiplepar a preparar dicha masa leudada.
